While in central China this month, we noticed small vegetable farms everywhere—any open space became a garden. Fresh fruit and veggie markets were on nearly every corner, and people seemed to shop daily. Food went straight from harvest to table, without long transport or storage, keeping it fresh, flavorful, and nutrient-dense.

Just got home from China! One of our trip highlights was visiting a blueberry field in Shandong province. This farm raises southern highbush varieties that require greenhouses for its cold northern climate. Bushes grow in pots, are fast growing, have short life spans. Result? Fresh berries almost year around. Rather than pruning being the major labor requirement, they have to hand remove the blossoms, which don’t fall off on their own.

Most fresh market blueberries come from Yunnan province, south China, and we purchased several varieties at a local market and enjoyed tasting them!

This December was a great time for digging horseradish! Harvesting late in the year seems to add more bite to horseradish, but most years the ground is too hard for this.

Clean the roots well. Peel. Grate. Blend with:
1 cup grated root
1/4 tsp canning salt
1/3 cup white vinegar

Enjoy! And have a happy new year!
