The sound of the humming crusher-destemmer is music to our ears! 🍇🎶 As the grape clusters are raked into the hopper, the auger gently separates the berries from their stems, sending them through rollers that pinch the fruit right into the fermentation bins below to collect all that fresh juice and skins.

After cold settling and fermentation, we scoop the fermented grape skins and free-run w**e out of the bins and load them straight into the press to separate the liquid from the skins. What flows out the bottom of the press is pure bliss! 🍷🔨 Next stop: settling and heading into barrels!

The Art of the Sacrifice: Why Drop Fruit

Great w**emaking requires a few tough choices, and right now, we are deliberately making a few cluster sacrifices in the vineyard. We drop perfectly good green fruit to ensure that the vine channels 100% of its energy, nutrients, and character into the remaining select clusters. By reducing the crop load, we guarantee unmatched flavor concentration, perfectly balanced acidity, and optimal ripening. It’s a painful process to watch, but it’s the ultimate secret to crafting the deeply complex, premium w**es our guests and club members love.

Talk about a cool vertical exercise! 🍷 Some of our amazing W**e Club members had the fun (and difficult!) task of choosing their favorite vintage during a recent lineup.

Our 2020, 2021, and 2022 Cuvée were stacked against each other, and when you throw in a little charcuterie from our sister business **echeeseco, we can proudly say it was indeed a fun night for all!
