Chicken Scarp Skewers with Sweet & Hot Italian Sausage. One bite and your whole cookout changes.

⏱ Prep: 30 min + marinate | 🔥 Cook: 12 min | 🍢 Makes ~18 skewers
Ingredients:
2 lbs chicken breast, cut into 2" cubes
2 lbs Premio Sweet & Hot Italian Sausage, links cut into thirds
Hot cherry peppers, stems removed
2 bell peppers, sliced hearty
2 yellow onions, sliced hearty
1 bag baby potatoes
Cherry pepper brine (from the jar)
1 cup dry white wine
1 cup low-sodium chicken stock
4 tbsp olive oil
5 garlic cloves, minced
1 tbsp fresh rosemary
Salt & black pepper to taste
Metal or wooden skewers
Steps:
1. Boil or microwave baby potatoes. Cool & halve if large.
2. Mix chicken with 2 tbsp olive oil, garlic, rosemary, salt, pepper, 2 tbsp brine, ½ cup wine & ½ cup stock. Marinate 30–60 min.
3. Build skewers: alternate chicken, sausage, cherry peppers, bell pepper, onion & potato.
4. Simmer remaining wine, stock, 2 tbsp brine, 2 tbsp olive oil & extra peppers 5–7 min.
5. Grill medium-high 10–12 min, turning until cooked through.
6. Plate, drizzle with warm sauce. Garnish with extra cherry peppers 🤌
