We have in Early Girl tomatoes, as well as the usual cluster tomatoes.

Also, sunscreen has been re-stocked, as well as aloe after care.

Produce came in today and we have yellow nectarines, watermelons, red grapes, strawberries and blueberries, red radishes and more. We also have twelve 3" potted basil plants for cooking or planting. Only $3.49!! We recommend transplanting the basil into a larger pot if you want to keep it indoors for use the the kitchen. If you will be planting it outdoors, it probably needs to be hardened off for a few days before it gets direct sun, or the leaves may burn.

The Co-op has lots of green onions in stock for $1.31 a bunch! Green onions are so versatile! They can be scrambled with eggs and cooked in many other ways; they can be eaten raw on salads or as a garnish. They are in the Allium family so they are antimicrobial, antioxidant and anti-inflammatory. They are a cheap and tasty way to eat some allium every day and stay healthy! Hint from Judy: cut them up into 1/4 - 1/2" pieces and store in a jar in fridge and they are ready to use and store better.

EASY BURRITO MIX: (all ingredients available at Co-op)
1 can organic garbanzo beans, drained (about 2 cups cooked)
1 can organic black beans, drained and rinsed (about 2 cups cooked)
1 can organic corn (about 2 cups cooked), drained
2-3 tomatoes chopped with pulp removed
1 bunch (about 6) green onions, chopped into 1/4 pieces
cilantro (or parsley if you don't like cilantro)
1/4 - 1/2 of a bell pepper, any color, chopped into 1/4" squares (optional)
lemon or lime juice
olive oil
tortillas

Mix first 7 ingredients and lightly dress with lemon/lime juice and olive oil to taste. Feel free to add salt, pepper or spices to taste. Heat a griddle or flat pan (cast iron preferred). Place tortilla on hot pan, put on some burrito mix and grated cheese, and cook until tortilla is your desired level of crispiness. Add sour cream, hot sauce, and guacamole, as desired and roll up or fold in half. Mix can also be eaten as a salad.
