🌾 Fresh-milled flour brings incredible flavor and nutrition to your sourdough, but it isn’t a straight swap for store bought flour. If you’re ready to start milling your own, here are some universal tips worth saving:
1️⃣ Hydration - Fresh milled flour absorbs more water. I usually add about 10% more than the recipe calls for, then adjust as the dough develops.
2️⃣ Fermentation timing - Enzymes and bran speed things up. Bulk fermentation may move faster, so watch the dough’s strength rather than the clock.
3️⃣ Sift (optional) - Removing some bran creates a lighter loaf. Save that bran to feed your starter or add it back in later for nutrition.
4️⃣ Gluten strength - Grains like einkorn, spelt, and rye have great health qualities, but are weaker in gluten. Blend them with stronger wheats (like hard red or hard white) or lower hydration by about 10% for more structure.
5️⃣ Flavor and texture balance - Fresh flour has a delicious nutty, complex taste, but it can also create denser loaves, so try 25–50% fresh-milled mixed with bread flour until you learn how your grain behaves.
6️⃣ Storage - Fresh flour is delicate. Nutrients and oils break down quickly at room temperature, vitamins like E and B can drop within 24–72 hours. Mill only what you’ll bake with, or freeze extras right away to keep them fresh. Store bought flour has the wheat germ and bran removed (the most nutrient dense part) and then is bleached and enriched (synthetic vitamins added) to keep it shelf stable.
👉Note: Every grain, mill, and kitchen is different. Think of these tips as guide rails, not strict rules. Your eyes, hands, and nose will tell you what the dough needs.
