Things you can change:
1. You can add, reduce, or change dry spices and sugar to suit your taste. For jellies and jams, reducing sugar may affect the set, but not the safety
2. You can safely reduce or omit a low acid ingredient
3. You can safely swap one high acid fruit for another
4. You can swap different varieties of the same food (red onions for yellow onions, sweet peppers for hot peppers, etc).
Things you can't change:
1. You cannot reduce the liquid in a recipe. It's needed for heat transfer.
2. You cannot typically add a low acid ingredient. You can sometimes swap one for another, but not always.
3. You cannot reduce or omit added acid (lemon juice, vinegar, citric acid). You can sometimes swap it for a different form (lime juice instead of lemon, etc).
4. You cannot substitute fresh lemon juice when the recipe specifies bottled. You can substitute bottled if the recipe says fresh, as that indicates it's only for flavor and color retention rather than for acidity.
