🚨 WAIT… DID OUR CAKE MIXES GET SMALLER?! 🎂👀

Have you noticed the change in Betty Crocker cake mixes? It’s not just the new look of the box! The boxes I compared were about 13.5 oz for Betty Crocker versus 15.25 oz for Duncan Hines and Pillsbury. That’s a noticeable difference when you’re baking!

Same size box? Nope. Same amount of cake mix? Also nope! 🤔

This matters even more when you’re using cake mixes for recipes that call for a whole box. So next time you’re shopping, check the ounces—not just the price!

Have you noticed this change, or am I the last one finding out? 😂👇

Authentic CHIMICHURRI SAUCE!!

Put it on everything and thank me later! It stays in the fridge for up to 5 days!

For this chimichurri, you’ll need:

• 1 bunch of parsley, or about 1 cup, finely chopped
• 3 garlic cloves, finely chopped
• 1 teaspoon dried oregano
• 1 teaspoon paprika
• 1 teaspoon chili flakes, or more to taste
• 2 tablespoons warm water
• 4 tablespoons white vinegar
• ½ cup neutral oil, such as avocado, canola, or vegetable oil
• 1 teaspoon salt

To prepare it, start by combining the warm water with the oregano, paprika, and chili flakes. Let the spices bloom for a few minutes, which helps release their flavor. Then add the chopped parsley, garlic, vinegar, oil, and salt. Mix everything together until well combined.

Refrigerate the chimichurri for at least 30 minutes before serving to allow the flavors to develop. You can also try using olive oil for a richer flavor.

Buttery Fondant Potatoes
OUR FAVORITE ❤️
Crispy, golden on the outside, incredibly tender and buttery on the inside—these fondant potatoes look fancy but are surprisingly easy to make!

Ingredients

• 4 large Yukon Gold potatoes
• 2 tablespoons olive oil
• 3 tablespoons unsalted butter
• 3 cloves garlic, smashed
• 2–3 sprigs fresh thyme
• 1 cup chicken broth
• 1 teaspoon salt, plus more to taste
• ½ teaspoon black pepper

Directions

1. Peel the potatoes and cut them into thick, even cylinders—about 1½–2 inches thick. Trim the ends so they stand flat.
2. Pat the potatoes very dry and season all sides with salt and pepper.
3. Heat olive oil in an oven-safe skillet over medium-high heat. Add the potatoes and sear for about 4–5 minutes per side, until deeply golden brown.
4. Add the butter, smashed garlic and thyme. Let the butter melt and spoon the fragrant butter over the potatoes for about 1 minute.
5. Pour the chicken broth into the skillet. It should come about ⅓ to ½ of the way up the potatoes.
6. Transfer the skillet to a 400°F oven and roast for about 25–30 minutes, or until the potatoes are fork-tender and have absorbed some of that delicious broth.
7. Spoon the buttery pan juices over the potatoes and serve hot.

✨ The secret: Don’t rush the browning! That deep golden crust is what gives fondant potatoes their incredible flavor.

Betzy’s Kitchen tip: If you want them extra luxurious, finish with another small pat of butter right before serving. 🤤

Easy old Fashion Fresh Peach Cobbler 🍑

For the peaches:
* 4-5 very ripe peaches
* ½ cup brown sugar
* 1 tablespoon lemon juice
* 1 teaspoon vanilla
* ½ teaspoon cinnamon
* 1 tablespoon cornstarch
* Pinch of salt

For the topping:

* 1 cup all-purpose flour
* ¾ cup brown sugar
* 1 teaspoon baking powder
* ¼ teaspoon salt
* ½ teaspoon cinnamon
* ½ cup (1 stick) melted butter
* ½ cup milk
* 1 teaspoon vanilla

How to make it

1. Heat oven to 350°F. Butter a 9×9-inch baking dish.
2. Slice your peaches. Since they’re super ripe, you can leave the skins on or peel them—either works.
3. Toss peaches with brown sugar, lemon juice, vanilla, cinnamon, cornstarch and salt. Let them sit for about 10 minutes so they get nice and juicy.
4. Pour the peach mixture into your baking dish.
5. In a bowl, whisk together flour, brown sugar, baking powder, salt and cinnamon.
6. Stir in melted butter, milk and vanilla. You want a thick, soft batter.
7. Spoon the batter over the peaches. Don’t worry about covering every inch—the peaches will bubble up around it.
8. Bake for 40–50 minutes, until the top is golden brown and the peach juices are bubbling around the edges.
9. Let it rest for 10–15 minutes before serving.
Serve it warm with a scoop of vanilla ice cream and spoon some of those caramelized peach juices over the top.

Even better: Sprinkle a tablespoon or two of coarse sugar over the batter before baking. It gives the top a gorgeous little crunch.
