Late summer is a great time to roast peppers over an open flame or in the oven. After blistering, allow peppers to cool and peel their skins. The result is a delicious smokey flavor.

We have been roasting green bell and jalapeno peppers for our Chili Chicken Verde. This spicy soup is made with a pesto of these roasted peppers, garlic, cumin and kale along with pulled chicken and navy beans.
