Mexican stew beef with potatoes!
In a blender add a small can chipotle sauce(or a few reg chipotles) I find the sauce isn't a spicy. 1 tablespoon of powdered clove, garlic powder,onion powder, thyme,oregano,cumin and cinnamon(all powdered is my preference. All 1 tablespoon) and salt to taste. Blend well.
Package of stew beef. Wash and drain then roll the meat in flour. In a medium pot add about 4 tablespoons of oil and brown the meat. Add the sauce and about 3-4 cups of water. Cook on low for a few hours. You may need to add water because it will get thick. Stir occasionally. When meat is almost done peel and cut up some potatoes and add into the stew.
Rice. 1 cup of rice. I wash and drain it. Add about 3-4 tablespoons of oil to a deep pan let pan get hot. (Medium heat)Then add rice. Stir until the rice doesn't stick together shouldn't take more than 5 mins. Add enough water to cover the rice. Add salt and stir only once to stir in the salt. Turn down to medium low heat and let cook. Add water if needed. Don't stir the rice while its cooking because it will make the rice sticky. You can cover the rice while its cooking , but I always cover it when it finishes and let the steam keep it hot.
