Maple & Brown Sugar Pecans

3 tbsp TruNorth Maple Syrup
2/3 cup brown sugar
1/3 cup white sugar
2 tbsp cinnamon
1-3 tbsp of water
3 cups of raw pecans

In a sauce pan, mix all ingredients except pecans over a low heat. When dissolved, add pecans and stir until all are coated and pan is dry. Add very small amounts of water to help coat pecans. Stir and coat for about 6-8 minutes. Remove from heat and let cool on parchment paper.

The Annual Taste-Testing of our syrup took place on Clear Lake this week. Our seven judges sampled 4 batches. The top batch will be entered into the Michigan Maple Syrup Association annual competition in January. The 3/8 Golden and the 3/29 Dark Amber came out on top.

Spring clean up. Washed the buckets, flushed the lines, found what might be the Mother Tree of our sugarbush: Either an ancient sugar maple or an ENT from Middle Earth. Some homemade focaccia with maple syrup for breakfast.

Made a stop at Shenanigans yesterday evening to drop off some Maple Syrup. Thank you to Mike and Bernie Roberts for hosting, and to Bill and Jill Welch for supporting TruNorth!
