With all the conversation lately about where our beef comes from, we think knowing whatโs behind your beef matters too. ๐ข๐๐ฟ ๐ต๐ฒ๐ฟ๐ฑ ๐ถ๐ ๐บ๐ฎ๐ฑ๐ฒ ๐๐ฝ ๐ผ๐ณ ๐ฏ๐ผ๐๐ต ๐๐๐น๐น๐ฏ๐น๐ผ๐ผ๐ฑ & ๐ฃ๐๐ฟ๐ฒ๐ฏ๐ฟ๐ฒ๐ฑ ๐ช๐ฎ๐ด๐๐, and weโre incredibly intentional about the genetics we bring into each generation
Itโs easy to look at a beautifully marbled steak and think thatโs where the story starts. But some of the most important decisions behind great beef are made years before that steak ever hits the grill.
Which cows do we breed? Which bulls complement them? What traits do we want to carry into the next generation?
Marbling is obviously high on our list; we are raising Wagyu after all. But weโre also looking at growth, structure, maternal traits, temperament & the overall quality of the animal.
& while every cow on our farm carries genetics that trace back to the original Japanese Wagyu bloodlines, our cattle are as American as they come. ๐บ๐ธ
What can I say? We love some good genetics.
