Yes, it's 2:29am. My plan was to put some beans on to cook earlier before bed. But I was so tired and I decided. Nah, I'll just make them tomorrow. But after laying down and dosing off. I tossed and turned, tossed and turned. So I decided to just get up and put them on to cook. The crazy thing is I don't even eat beans. But if I put my mind to do something and then not able to get around to it. It will bother me to no end. Until I just get up and get it done. Uhhhh, ok now I can go back to bed. Gheez I hate that I'm like that.

I made some homemade beef enchiladas with some leftover Spanish rice. Some good southern sweet tea to wash it all down.

Because they were on sale and because it's so easy to make. I prepared a 22 ounce jar of red raspberry jam and a 22 ounce jar of blackberry jam. I actually had a little leftover from both to make a small 8 ounce jar of mixed berry jam.
