Wow yesterday was tough. 😔 The first Monday I haven’t been out delivering yummies was difficult. I miss my people!!!😭

This is all so insanely frustrating as my vision seems a little worse every day.

I do have an appointment to start the process, however it could be January or February before both eyes are done. I’m on all sorts of waiting lists and last minute emergency call lists. 🤞🏼🤞🏼🤞🏼my first pre-op appt is November 7 so maybe I’ll get lucky.

I appreciate all of the kind words and good vibes that so many of you are sending me. I just want you to know how grateful I am for you!!

I’ll keep you posted!! In the meantime, I found the photo below to be about as close to what I’m seeing right now in my left eye. My right eye is not as bad so I rely on it mostly.

This whole experience has been so crazy and when it started, back in January, it was slow and it wasn’t obvious right away that the reason I was having issues was because I couldn’t see. I literally thought I was losing my mind. 😢

Don’t skip going to the eye doctor, the dentist, or the GYN, even if you’re broke. Even if you don’t have insurance. Remember that you can take care of nobody if you don’t take care of yourself first. Stop putting yourself last.

That’s a lesson I’m currently learning.

Hello my little dumplings! The reviews are in… You like me! You REALLY like me! I think some meals were eaten before they made it home today 😳🤣

As you know, feeding people is my love language which makes this post all the more difficult. I am going to have to (temporarily I hope) PAUSE Mina’s Menu.

I have a rapidly deteriorating visual field. I have cataracts. Cataracts on steroids. Literally. In the last three months they have accelerated in my loss of vision. I have been trying so hard to compensate for the fact that I knew my vision was failing, trying to hold on until I can get into an eye doctor who can remove them. The wait is long but I thought I could make it to get at least one eye done before forcing myself to stop. I realized today that won’t work anymore. Driving the same route Monday after Monday, I am seeing less and less. I was scared to drive today. It isn’t just the driving. I cut my hand last month because my depth perception caused me to fall and slice my hand open on that green bean lid.  It also is attributing to the fact that my eyes are changing color.

I felt truly defeated today when I was told it could be months before my surgeries can be completed.

I’m not really sure what my next move is 🤔but I can assure you it will be done in baby steps. 👀

I just want to thank you all for being so supportive of my little business that I tried to get off the ground. I really hope that I can resume doing something that I love so much after my cataract surgery. 💔😔

Police are tailing behind a stolen ambulance from Jefferson County Monday.

Well, today started off a little crazy. Not even out of the house for 10 minutes and I almost got clipped by what appeared to be a stolen ambulance of all things.

Back door wide-open flying up Highway 55 at about 80 mph as s**t from the ambulance is flying out the back, police are everywhere. IT WAS BANANAS!! 🍌🍌🍌🍉

I’m happy to say that deliveries are all complete and I hope that I didn’t forget anything…but I think I did good this time lol.

Please allow me to introduce Mississippi Spice Muffins. This recipe has been in my family for as long as I can remember. My mom used to make a huge batch of these and we would just wipe them out!! 🤤🤤

These little bites of deliciousness taste amazing with powdered sugar or warm with butter. They are a quick and easy way to throw some food in your kids’ mouths out the door!😁

The “spice” is a very Autumnal mix of allspice, pie spice, cloves and cinnamon! 🍁🍂🍁🍂

My daughter asked for some and I forgot how AMAZING these are!!

I’m offering 24 mini muffins or 12 regular muffins for $10 as a special to be delivered on Monday!!

I am thinking of offering a quick breakfast/brunchy option like this every now and then. Let me know if that’s something you’d be interested in!! (You could bring it to a morning meeting and be the star of the show)…..🥳😎
