Rockabilly Farm is the product of hard work, blood, sweat and tears from Anni Saludo of Deborah Stanton. We moved here 10years ago and wanted to create a sustainable, eco friendly farm, raise, share and enjoy fantastic foods. Deborah Stanton has been an award winning chef for over 25 years, cook book author & television personality on TV FoodNetwork & other major networks. Named as one of the Top

100 Women we Love in the US, this 5 time Honoree of James Beard House has been published in Art Culinaire & received rave reviews from NYTimes, New Yorker, Miami Herald, TimeOutNYC and more. Anni brings many talents and a great deal of experience in the fresh food arena as she worked for a variety of incredible farmers in NY state, catering high end and high volume events as well as running/working the front of the house managing in their restaurant Deborah Life Love Food in NYC. In addition to her knowledge of farm raised foods, incredible customer service, helping the Planet has always been important and working for Patagonia created even more awareness of how much work needs to be done. Our team looks forward to the daily challenges, rewards and growth as farmers & bring many amazing products to the Triangle Area of North Carolina from pasture raised lamb, goat, chicken to original Chef events, dinners and other culinary art projects.

It’s a lot of work but looking back over the years at all the beautiful babies I do miss it ❤️❤️❤️ this is one season Freckles gave birth to 3 beautiful girls.
Harriet, Holly and Hillary…Holly still lives on Rockabilly Farm and has given us amazing lambs over the years.
Hillary+Harriet are on other friends’ farms living amazing lives as well ❤️❤️❤️

Corn Ribs 👍🏻🥰
Recipe:
Dry seasoning for Corn:
•1/2 teaspoon cumin��•1/2 teaspoon smoked paprika
�•1/4 teaspoon chili powder
�•1/4 teaspoon salt
Combine all ingredients w fork or whisk

Sauce for slathering schmearing:

•2 Tablespoons Mayo
•2 Tablespoons sour cream
•1 Tablespoon minced fresh or pickled jalapeños (choose your heat level)
•juice of 1/2 Lime
Whisk all the above ingredients

U all Don’t need to watch Calories 🤣😂 bcuz this isn't low fat or low cal!
�Fresh toppings:�•1/2 cup cotija cheese crumbled
•1/3 cup fresh cilantro diced

4 ears (how every many you and Art normally eat)of 🌽 remove husks, cut about 1" off tip then break in half.

Stand ear piece of cob vertical and using your chef's knife cut in half lengthwise thru the core.
Then place cut side down and cut the halves again.
You will have 8-1/4 pieces per ear of corn ✌🏼
Repeat w other 3ears.

It's so crazy hot outside so u can grill vs oven baking these.

Heat Grill to Medium (if gas) otherwise raise your rack over coals

•Toss corn ribs in a bowl with 1-2 Tablespoons of olive/corn oil and dry seasoning mix. You can hold back some dry seasoning if you have smaller ears of corn. You don't want them blackened.
�•Add ribs to grill, cut side down. Close lid and cook for about 7-8 minutes*�
•Open, flip ribs to other cut side and cook for another 6-7 minutes*

*The cooking times will vary depending on the size of your 🌽 smaller, delicate white corn will go quicker.
Your end result is a crispy little ribs w intensified sweet corn flavor as their moisture has evaporated

So keep an eye on them, better under cooked slightly than burnt 😁🤣

Some People Deep Fry! Be very mindful to Not overcook and it be careful as corn has a high moisture content 👍🏻
