It’s National Grilling Month, and before July comes to a close, we wanted to share a healthy, fresh, and delicious recipe for you to try!

Grilled Chicken & Pineapple Skewers
Serves: 6-8
Prep Time: 20 minutes (+ 30 minutes marinating)
Cook Time: 10-12 minutes

Ingredients:
2 lbs boneless, skinless chicken breast, cut into 1-inch cubes
3 cups fresh pineapple, cut into chunks
1 red bell pepper, cut into 1-inch pieces
1 green bell pepper, cut into 1-inch pieces
1 red onion, cut into wedges
Wooden or metal skewers
Marinade
¼ cup low-sodium soy sauce
2 tbsp olive oil
2 tbsp pineapple juice
1 tbsp honey
2 cloves garlic, minced
1 tsp ground ginger
½ tsp black pepper

Directions
🔸In a large bowl, whisk together the soy sauce, olive oil, pineapple juice, honey, garlic, ginger, and black pepper.
🔸Add the chicken cubes and toss to coat. Cover and refrigerate for at least 30 minutes.
🔸Preheat the grill to medium-high heat.
🔸Thread the chicken, pineapple, peppers, and onion onto skewers, alternating ingredients for color and flavor.
🔸Grill for 10-12 minutes, turning every 2-3 minutes, until the chicken reaches an internal temperature of 165°F.
🔸Remove from the grill and let rest for 2-3 minutes before serving.

Serving Suggestion
Serve over brown rice or alongside a fresh cucumber salad for a colorful, balanced meal packed with lean protein, vitamin C, and naturally sweet pineapple flavor.
