Chicken cutlets are the most useful thing you can make right now.

We’re back to school, back to packed schedules, and back to the “what’s for dinner” panic. Make a double batch of these on Sunday and you’re set for the week — slice them over a salad, stuff them in a sandwich, turn them into a chicken parm, or just eat one standing over the counter because it’s been a day.

The secret to the crust is three ingredients: traditional breadcrumbs, panko, and parmesan. That combination gives you the perfect crispy coating every single time.

Three reasons — and honestly more — why you should’ve had seafood for dinner tonight. Comment SEAFOOD and I’ll send you all my favorite recipes to get you started.

Most people skip seafood at home because they think it’s complicated, expensive, or easy to mess up. It’s none of those things. Fish cooks faster than chicken, shrimp comes together in under five minutes, and a hot pan with a little butter does most of the work for you.

The nutrition case is hard to argue with. Seafood is one of the most nutrient-dense proteins you can eat — B12, selenium, lean protein, and if you’re going fatty fish, omega-3s too. Salmon, cod, shrimp, scallops — it all counts.

And it’s way more approachable than you think. Frozen is fine, farmed is fine, and most seafood recipes take under ten minutes start to finish. There’s no excuse not to be eating more of it.

This is my family’s lobster roll recipe and it has a few rules.

Knuckle and claw only, light on the mayo, fresh tarragon and chives and dill, and split-top buns toasted in butter on both flat sides. The tarragon is the thing that makes this different from every other lobster roll recipe out there, don’t skip it! Note: I DO prefer a roll without lettuce but included it because I know some people love it!

Random things I ate this week, unfiltered:

Grilled chicken thighs with a stone fruit and heirloom tomato salad, topped with burrata and basil, made at home for lunch. Movie night with Charlotte, popcorn and old fashioned candy, malted milk balls and chocolate covered nonpareils. A local cookbook club chose my website to cook from this week and eating a table full of my own recipes made by other people was genuinely so cool!!

Lunch from Maes in Marshfield Mae’s Sandwich Shop where Eric and I always do a swap and switch, the hot tuna might be my new favorite thing on their menu, and the Stevie is a classic for a reason!

An impromptu Thursday fridge cleanout turned into swordfish with peppers and onions and rice cooked in bone broth. A cute coffee date with an iced matcha from Seabird Coffee & Co ! My favorite lobster roll from Green Harbor Lobster Pound Green Harbor Lobster Pound ! A cocktail at a networking event with friends The Wandering Pour Mobile Bar and Small Bites Caterer Girl Gang Association ! A lobster pie we tested.

And today, breakfast with Charlotte, poached eggs over hash with hollandaise, crispy potatoes, an iced coffee, and a whole milk, because it is my PERSONAL mission to single handedly keep the dairy industry alive!!!!! Stars On Hingham Harbor

4 pasta salads you need to make before summer is over!!!!

Tortellini Pesto Pasta Salad — cheese tortellini, cherry tomatoes, mozzarella pearls, and a garlic lemon vinaigrette laced with pesto. The one everyone asks for at the cookout.

Summer Tortellini Salad with Italian Dressing — bell pepper, red onion, colby jack, pepperoni, and Italian dressing. Please do not show up to the function with a sad macaroni salad when this exists.

Greek Shrimp Orzo Pasta Salad — lemony orzo with kalamata olives, crumbled feta, and shrimp. No mayo, 25 minutes, and even better the next day.

New England Lobster Pasta Salad — buttery lobster tossed with orecchiette, fresh herbs, Old Bay, and a creamy lemon dressing. All the flavors of a lobster roll in pasta salad form.

A very full Tuesday on the South Shore.

Post office run, two work meetings, a work event, and grocery shopping for recipe testing tomorrow. The kind of day where you don’t sit down until 4pm.

But somewhere in the middle of all of it I snuck in a lobster roll from Green Harbor Lobster Pound and honestly it reset everything.

Oh, and I got some news today that I’m not quite ready to share yet — but let’s just say someone I really look up to reached out about working together and it should come as absolutely no surprise to anyone who knows me why I’d be over the moon about it. More soon!!!!!
