We made sweet potato fries from our crop and they were amazing! When you cure sweet potatoes, the sugars set more fully and the potatoes are much sweeter.

Somehow, I managed to mangle a 4-ingredient aioli 😂 but Lori Brandt resurrected it and it, too, was fantastic.

I have a few more pounds of "fingerling" sweet potatoes and they will be available at the Perrysburg Farmer's Market on Thursday, Oct. 8.

They are perfect for making these fries. We leave the skin on and that makes them even better!
