Most people throw away their starter thinking it's dead when it's actually just telling them something.
For the longest time I didn't understand what I was looking at when I opened my starter jar. It would look one way and I'd think it was fine. It would look different and I'd panic thinking I killed it. But the truth is, your starter is constantly communicating. Every appearance means something specific. And if you can't read it, you're about to toss out something that's perfectly fine.
Let me break down what you're actually seeing so you stop making this mistake.
If your starter is bubbly and active with lots of visible bubbles throughout, you're looking at a hungry and thriving culture. It's alive, it's working, it wants to be fed. This is good. If it's creamy and thick with a smooth, almost yogurt-like consistency, you're getting close to feeding time but you're not urgent yet. You've got a little window here.
A slight separation where liquid sits on top of the starter? That's h***h. It looks scary but it's totally normal. It just means your starter is getting a little hungry and the bacteria have produced some liquid. Stir it back in or pour it off—both are fine. This is NOT your starter dying.
Now here's the cool part: if your starter is stretchy and stringy when you stir it, that means you've got great gluten development happening. That's strong culture activity right there.
But then there are actual signs that your starter needs attention. A gray h***h layer (not the clear liquid, but specifically gray) means your starter is hungry and needs to be stirred and fed. A dry or crusty top means you're not feeding frequently enough or you're not covering it well. It's drying out and getting stressed. A runny, watery starter means it's way overdue for feeding—you've gone too long without paying attention.
And if you see actual mold—fuzzy growth, usually pink or orange or blue—that's the one time you need to throw it out. That's actual contamination, not just a quirk of fermentation.
The reason I'm telling you this is because so many people look at their starter and panic. They don't know if what they're seeing is normal or a problem. So they throw it away. But your starter isn't mysterious. It's actually super straightforward once you understand the language. Every appearance is telling you something.
So the next time you look in your jar, compare it to this. Find what you're seeing. That tells you if your starter is happy, if it's hungry, or if it actually needs help. Your starter isn't being difficult—it's just communicating. Learn to listen to it before you accidentally toss out something you didn't need to. 💚
