My mom said you wanted my salsa verde recipe, so here it is. I'm sorry it took a little bit for me to write it out for you
I like to make my salsa Verde in bulk that way I can freeze it so i usually do 5 or 6 lbs of tomatillios but I'll give you a single batch since it's just you and chava and if you want to make a bigger batch you can. To freeze, I put a dinners amount worth in a vacuum sealer bag seal and freeze, but you can put it in a Tupperware or zip lock bag to freeze.
1 lb tomatillios de-husked and washed with soap and water to get the sticky off
1/2 big yellow onion cut into 2 or 1 medium size cut into 4
2-3 serranos depending on how hot you want it. (You can do jalapeño if you want or mix and match. you could also add pablano or ancho in there as well. I leave in the seeds)
1 head of garlic peeled and smashed (more or less to your taste I like more garlic, so for me, always 1 head )
1 bunch of cilantro (stems included; add all parts)
Salt pepper and cumin to taste I don't really measure these things. I usually just sprinkle it over the veggies, but an estimate would be ...
1/2 to 1 tsp salt
1/4 to 1/2 tsp black pepper( or a mix of black and white if you have it )
1/2 to 1 TBSP cumin
Oil or vegetable oil for roasting
After washing and de-husking, put all vegetables in a roasting pan and toss them with olive oil or vegetable oil, maybe 1/4 cup of oil or less. You want the vegetables to completely covered. Sprinkle with your seasonings and toss again. I suggest starting with the lower amounts and taste, then add more if needed, especially the salt. Roast in the pan on a grill or in the broiler turning everything a couple times untill peppers are starting to get burnt, tomatillios are soft and letting out their liquids and onions are getting soft and slightly black. Put everything in the blender with your cilantro and blend to the consistency you like ( I like it more smooth). Some people add lime, but I don't. Taste and see if you need to add any more salt pepper or cumin. Your salsa is done and ready for the next part of your recipe enchiladas or chili or just dip corn chips in
