Chicken In Yellow Thai Coconut Curry is our brand new curry dish and only the third curry dish we’ve ever made. After rave reviews on our last curry we knew this was something we needed to keep doing. So, here is a mild dish, popping with aromatic herbs and spices. It’s perfect for these cooler days. You’ll get a mix of white and dark meats. 
Vegetarian Option - Lentil Dahl

*Grass Finished Beef Meatloaf
Vegetarian option - Garbanzo Bean Loaf (may include flax seeds)

*Roasted Vegetable Medley (To be paired with the Curry dish)

On Sunday we celebrated a great 2023 here at CT. First we did some breath work lead by the talented Adam Spillman. We all agreed it was an incredibly impactful hour of breath, reflection, and journaling. Afterwards we dined at Pixan (we forgot to take a picture of that) and talked of deep things and how delicious their food was! We are incredibly grateful to have such an amazing team who likes to spend time together.

This week in the Healthy Meals Kitchen we have our Classic Chicken Vegetable Soup. This is a rich brothy chicken soup chock full of bright carrots, aromatic rosemary & savory chicken. Our freshly made chicken stock elevates the nutrition & flavor. This soup cuts through the coldest of these winter days.

We haven’t seen our Meatballs in Puttanesca recipe since last spring! And with all this snow, maybe some of you are ready for the change in season. Until then, warm up with our comforting and nutrient-packed dishes.

For our Puttanesca, we’ll start with grass-finished beef and add just the right amount of herbs and spices. After we’ve formed the meatballs we’ll bake them in a tomato sauce that’s called Puttanesca. This sauce combines tomatoes with a smattering of mouth watering ingredients that will leave you begging for more! (The anchovy flavor is very mellow.)

Vegetarian option for this dish is a Roasted Lentil Tempeh.

*Smokey Paprika and Sea Salt Brined Whole Roasted Chicken
free range whole roasted chicken, smoked paprika, extra virgin olive oil, sea salt
vegetarian version -
Polenta and Black Beans(Pictured)

We definitely grilled some chicken in the snow this past weekend!

These Fajita Style Grilled Chicken Breasts with Red Onions and Bell Peppers continue to receive a show stopping amount of accolades! So, here they are once again to do the tango on your taste buds.

We’ll give these chicken breasts a liberal amount of mouth watering spices and then pair them with slightly crunchy peppers and melt in your mouth onions. Let’s goooo!
Vegetarian option: grilled cauliflower and black beans

Vegetarian version - butter beans
