I just wanted to thank everyone who has been using the honey stand and let you know that it will be open year round. Freezing temperatures do not harm honey in any way. If honey freezes, just bring in back to room temperature and it will be fine.
Also, honey never goes bad, but may crystallize at some point. You can continue to use it in its crystallized form or you can uncrystallize it. Some ways to uncrystallize honey are:
1. Put it in a pot of warm water (less than 140 deg) on the stove.
2. Fill 3/4 of a slow cooker or crock pot with water. Set to the lowest setting and put in the honey. Use a thermometer to check the water temperature. Ideally the water temperature would be between 100-120 degrees.
3. Put the honey out in the sun, or in a window of your home that gets direct sunlight, or in your car window.
DO NOT MICROWAVE HONEY
