Auntie Dalie's Pasta Auntie Dalie's is a small batch artisan dried pasta maker. Auntie Dalie was a one of a kind original.

We use traditional Italian pasta making methods, including Brass dies, imported Italian flour with water and a time tested air drying process. A first generation Italian American was the hardest working woman I ever knew, took pride in everything she did and wanted us all to do the same. As little girls, my sisters and I would go to Auntie Dalie's, take out the piece of plywood behind the match li

t stove and we'd begin to roll out dough for cappellettis.(YUMMY!) Drinking our "Coffee Milk" while she tells us, "don't tell your mother", we would make hundreds for family gatherings. She taught us all, life is not a handout, work hard at everything you do and if can do that, you'll feel pride in just doing the best job you can. Auntie Dalie's was founded with her approach to life in mind. Our pasta is all original with nothing extra added or needed to make it good. We use traditional pasta making methods along with natural air drying just like they used and still use to this day in some parts of Italy .
