Today, I made freeze dried garlic scapes so I can make my favorite seasoning of them all: scape salt. Now that they're dry and blended, I'll mix them with high quality sea salt and have a beautiful, vibrant green addition to pretty much everything I make this summer. Plus plenty leftover for other spice mixes and to use on their own in place of garlic powder!

Why come to a chicken processing class? (See the testimonial at the end to see our why!)

⭐To see how your food is raised
⭐ To learn to grow your own protein
⭐ To gain better understanding and appreciation for the animals who provide you with nourishment
⭐ To discover things about yourself - strength, ability, and courage.

Why do we do this? One of my favorite student stories is about this fantastic woman who came from the city to one of our classes. Her goal was to appreciate where her food came from as she felt disconnected from it. She watched for the entirety of the class, convinced she couldn't process a chicken as she was too emotional to do so. But she wanted to, for several reasons. With encouragement and tearful determination she did every step and she was so proud of herself at the end. She left the farm with a deeper understanding and appreciation not only for the sacrifice made by the animal that fed her, but her own abilities! It was such a beautiful thing to witness.

Why move meat birds around your yard? To fertilize it! These birds p**p a LOT and there will be dead looking grass where they've been but with regular yard maintenance like watering and mowing, the patches where the tractor has been grow back more green, lush, and thick! We've always had better grass and fewer weeds where our birds have been as well since their high nitrogen droppings burn unwanted seeds while they feed the soil.

Meat birds don't need a lot of leg room. While layers require a few square feet per bird, meat breeds don't move around much as they grow at such an accelerated rate. This means they only need about 1 square foot of room per bird in a predator proof shelter. Because of this, they make a great homegrown protein source on almost any sized lot. They're also considerably more quiet than layers as they don't grow old enough to crow or have an egg song, making them neighborhood friendly! We do advocate for a moveable shelter so the birds spend no time sitting in their own mess and always have access to fresh grass and sunshine, but these shelters can be as small or large as your flock or yard dictates. Our tractor is 8 feet by 8 feet and we can comfortably house up to 60 birds at a time in it!
