A glimpse of hard cheese making in some photos. 💛
If you would’ve asked me several years ago if I would own a small creamery and become a cheesemaker I would’ve laughed and said “you’re crazy.”
But, I’m so glad it has happened. 💛
There is something incredibly special about making cheese that begins long before the milk reaches our creamery.
Our hard cheeses start at Swain’s Legacy Farm, where their beautiful Jersey cows produce rich, cream-line A2A2 milk. The quality of the milk is the foundation of everything we do, and we’re so grateful to work with a farm that shares our passion for exceptional dairy and caring for the land and animals. We love supporting local and Swain’s Legacy Farm is just one of them.
From there, the real craftsmanship begins.
• Fresh milk is placed in the vat and carefully cultured. Humidity, temperature, pH-it all matters.
• The curds are slowly cut and stirred until they reach just the right texture.
• Each wheel is then ladled & hand-pressed into each mold to remove excess whey and create a beautiful, dense paste. Weight is then added to make sure that everything seals perfectly.
• Every wheel is brined to develop flavor and protect the cheese.
• Then comes the hardest part… waiting.
Our wheels spend months aging, where they’re turned, monitored, and cared for by hand as they slowly develop their flavor, texture, and natural rind. They develop themselves. Time is one ingredient that simply can’t be rushed and I’m okay with that. 💛
Every wheel produced at Southern Charm Farm represents countless hours of work—from the early mornings caring for Jersey cows at Swain’s Legacy Farm to the daily attention each cheese receives here at Southern Charm Farm.
This is why artisan cheese is so much more than food. It’s patience. It’s craftsmanship. It’s learning a new process. It’s a partnership between two local farms dedicated to producing something truly special.
