Peruvian cuisine is often called one of the most exciting food cultures in the world because it blends Indigenous, Spanish, African, Chinese, and Japanese influences into something completely unique.

Translation?

Think bright citrus. Fresh seafood. Vibrant peppers. Smoky grilled meats. Layers of flavor that somehow feel both comforting and surprising at the same time.

Chef’s five-course menu will take you from blue crab and tuna tiradito to traditional ceviche, pollo a la brasa, and one of Peru’s most beloved desserts, Suspiro de Limeña.

Pair that with carefully selected wines, good company, and a few hours of culinary travel without ever leaving Hot Springs…

This is the cure. 😎☀️

Can we talk about how gorgeous this thing is for a second?

Our new Triple T Farms Tomato Carpaccio is summer on a plate… heirloom tomatoes & sweet cantaloupe grown just down the road, pickled mustard seeds, fermented criolla, orange sweet vermouth, spring onion, and oregano.

Bright. Cool. Refreshing. The kind of dish that reminds you what a tomato is actually supposed to taste like.

These aren’t tomatoes shipped across the country and picked before they were ready. They were grown right here by Triple T Farms and harvested at their peak.

Every ingredient on this plate was grown under the same Arkansas sun we’ve all been sweating through this week, and that’s something we’re incredibly proud of.

If you’ve spent the day on Lake Hamilton, this is the kind of dish that makes you slow down, cool off, and appreciate summer.

Hot Springs… this one’s for you. 🍅☀️🌿

You know that moment when a tomato actually tastes like a tomato?

When corn is so sweet it barely needs anything done to it?

When strawberries are perfectly ripe, juicy, and bursting with flavor?

That’s what’s happening in our kitchen right now.

This week’s new menu features a strawberry blackened grouper, tomato carpaccio, and an Esau corn & chanterelle risotto that tastes like summer in Arkansas.

& it should, because the produce on these plates was growing under the same sun we were all sweating through earlier today.

It didn’t travel across the country.
It came from local farms, harvested at peak season, and landed in our kitchen while it was still at its absolute best.

This is the time of year chefs dream about & trust us… you can taste it.

Chef Justin grew up in New Orleans, where food isn’t just food… it’s family. ⚜️ It’s gathering around a table, telling stories, arguing, laughing, and passing recipes down from one generation to the next.

Even now, there are certain dishes that take him right back to childhood with a single bite.
