T.C.'S Cherry Bourbon BBQ Sauce is a mild and semi-sweet sauce. Perfect as a BBQ sauce, dipping sauce, or part of your favorite marinade.

Damn It!!! (It's our page and cuss if I want to) But I did it again. I know it's been awhile since we posted. Sorry about that. Winter time, cold out, all that stuff. We did a Tomahawk steak today and thought this would be the perfect time to get back into the posts. But as usual, once I started cooking I forgot all about the pics. So this is our left overs. Sorry. But, I'll tell ya what we did. I marinaded this Tomahawk in my personal marinade. What is it, well I'll tell ya, I don't measure so go with 1 part whiskey, 1 part your favorite steak sauce, 2 part T.C.'S Cherry bourbon BBQ Sauce, Spoon of garlic, Spoon of T.C.'S Special rub, and a dash of lemon juice. I pierce the meat with a multi blade tenderizer. Cover with marinade and let sit out for about 2 hrs to soak up marinade and meat to come to room temp. (Always bring steak up to room temp before cook.) Put it on the smoker at 245 deg with cherry wood. Pour the extra marinade left in the bowl over the steak. Took a little over 1 1/2 to get steak up to 125. Moved steak directly above charcoal to get that sear on both sides. Now it's at 130. PERFECT. Slice, eat, then cuss yourself out for not taking any pics. Enjoy. Thinking about bacon wrapped fillets next week. Same process, different meat and I'll try to get pics.

Hey all !!!! Thought I’d drop a quick post of this weekends meal. And, we didn’t use any T.C.’S Cherry bourbon BBQ sauce during the cook. This week was all about the rub. T.C.’S Special Rub !
Wanted to try a Prime Rib on the grill. Like always we get our meats and seafood at Weldon's Meat Market . They cut it right there and give me exactly what I need. In this case, it was a small 3lb, bone in, prime rib. We went small because it’s just Toni and I and didn’t want a lot of waste. So, I’ll just try and walk ya through all the pics. Started with just a coat of coarse sea salt and let it sit for a few hours. Came back and gave it a nice coating of our T.C.’S Special Rub. While I left that on the counter to come up to room temp, I got the grill ready. Using a standard Webber, I made a “snake” run with the charcoal. It keeps a handful of coals burning, and keeps burning around the grill as it goes. Grill came up to and held right around 260 doing this. Time to put the meat on. Had one probe on the grill to keep track of grill temp, and one in the center of roast for meat temp. Also threw some wood chips along the coals to get that bit of smoke. Then just grab a drink and let ‘er cook. How long? That depends, I go by meat temp, not time. Being a small roast, this took about an hour and half. I pulled it off at 122 deg, covered it and let it rest on the counter for about 20 min. It will keep cooking while covered and resting so when I uncovered it, it was about 127 deg. Perfect med rare. Now your gonna have to forgive me, by the time it was done, I was ready to eat and forgot all about the Fancy Pics. We cut this thing and ate! So last pic is of the leftovers. Sorry. Also, as you can see in the grill, I used about half the charcoal cooking for 1 ½ hour. So this little bit would have easily done 3 hrs or so. If you wrap it all the way around, you could prob get 8 – 10 hrs if you’re doing a long cook. I gotta say, I think this came out perfect, and the taste was awesome!!
