We truly appreciate our customers who value the animal, respect the process, and don’t let good meat go to waste! A customer’s roping steer had a leg injury, so unfortunately, it couldn’t be used for its original purpose. But around here, we believe in using every bit we can! No waste here! The ribeyes may be small, but they’ll still make a great steak.
