What is boudin (boo-dan)?

Boudin is a southern Cajun French food made of rice and meat stuffed in a sausage casing. Some people refer it to as rice dressing.
You can pair it with so many things.
Eat it by itself or use the boudin meat inside for stuffings such as chicken or pork chops.
