Every single day we have been BLESSED to have a maman as fun, loving, caring, and supportive as you. We would not be who we are without your motherly energy, unconditional love, and never ending guidance.

Although Tunisian representation is a huge driver for our daily endeavors, we constantly strive (selfishly) to live up to your standard of what is considered “good”. You never settled for less and never allowed us to do the same which is why we have always relied on your approval from the get go. You have always encouraged us to push the bar as high as possible, always reminding us that the sky is the limit. You have also been the biggest source of emotional support and comfort when times got tough for us… and we never ever had to ask for it, it was always just there, like the sun 🌞

Today may be ‘mother’s day’ but the reality is that everyday is your day. We cherish you like no other mama.

Shout out to all the special mamas out there, this world would be a very scary place without you all ❤️

What Romdhane (Ramadan) means to us:

We like to think of Ramadan in our home as a Tunisian style Thanksgiving on steroids. It’s all about appreciation, good food, and large gatherings of family and friends; but instead of lasting a single day, it lasts an entire month. Although we are not very religious, Ramadan has always been a special and fun time period for our family, especially our mother.

She has always taken her cooking extra seriously during the months of Ramadan, making sure that everything is on point; from the crispy egg brik, to main dishes like lamb couscous or molokhiya, to the late night sweets like samsa or hazelnut filled deglet nour dates.

Fasting, although not for everyone, helps one develop self control, patience, and a higher level of appreciation for the simple pleasures of life. It nudges one to eat less than they would due to a natural stomach shrinkage and hormonal shift from restricting their feeding time window. You know what else Ramadan makes you appreciate? Water. You know, that precious life force we often take for granted. That first sip of water at the table after a long day of fasting is always pure ecstasy…If you know, you know.

This heightened sense of appreciation extends beyond food and drink though. As a matter of fact the smallest of tasks, like buying fresh baguettes with you grandpa from the local bakery or even setting the table become something you savor, cherish, and remember for a long time. And that’s really what fasting is about: resisting the day’s temptations and appreciating the simple moments of life.

Whether you look at it from a religious perspective or not, there is no denying that fasting can be extremely beneficial to many. Regardless, we always feel good about the fact that it is Ramadan. We are more together, more satisfied, more grateful, and it’s just always a fun time. So whether you celebrate Ramadan or not, we’d like to extend our deepest gratitude and appreciation to you all. We still can’t believe the amount of growth we continue to be blessed to this day and for that we thank you from the bottom of our heart. Romdhankom Mabrouk!

Snapshots of Mama Béchira showing us around El Jem and telling us about her mama Zwïta's old home, where she grew up, like a shamanic mystical storyteller.

Interestingly, Zwïta's old home is a mere 2 minute walk from our grandparents' current home, literally around the corner. This is just an example of how tightly knit everything in El Jem is, which is quite refreshing when you are used to living in big cities where everybody mostly keeps to their business. In fact it is basically impossible for us to not have to stop multiple times in order to greet fellow Lejmis (people of El Jem) anytime we accompany mama Béchira or baba Ajmi during their daily errands. Everybody knows each other so conversations about how the other person's health is, how the kids are doing, and of course the occasional neighborhood gossip, are a regular thing...

Happy Birthday Kiki!!! 🥳

Kiki (@karim.arem ) is one of the co-founders behind Zwïta and although you don’t see him that much through our content, he is crucial to us. His background and expertise revolve around operations research, data science, and everything tech related. He spends much of his time crunching numbers and tinkering on out how we can do every single thing that we do better; from the production process all the way down to our logistical operations. He is our numbers guy and hands down Zwïta’s strategic brain. We like to think of Kiki as our CEO, well because he pretty much is.

He is one of the sweetest and most empathetic people you could ever meet and is also obsessed with his mom’s food, especially a deliciously fat Tunisian sandwich 🥖 He puts his heart into every single thing that he does, always with surgical precision, and we are nothing but blessed to have him.

Our Chile De Arbol sun-dried chilis are what bring the perfect level of spiciness to our spicy traditional harissa paste. Don’t underestimate these little red guys based on their size though, they pack an enormous punch of heat (15,000 to 30,000 Scoville Heat Units).

After being carefully de-stemmed, cleaned, and ground with our juicy Guajillos, we obtain a base that we feel is the perfect balance of sweetness and heat. A base that complements the harissa’s garlic character but also the floral aroma coming from the coriander and caraway.

This spicy harissa is our take on classic version of traditional harissa that originates in the Cap Bon and commonly referred to as هريسة عربي (“harissa arbi”) in Tunisian vernacular. Harissa arbi is traditionally produced with a deep level of heat that we mirror through our product. If you are new to the traditional flavors of Tunisia, we think you should give our flagship product, the spicy harissa, a try 🌶

Just over a year into existence and you guys have already made it possible for us to get to where we are today. We never really expected it starting out but here we are and there ain’t no going back. We’ve said many times but that’s only because we can’t emphasize it enough: We are so extremely grateful for all the support many of you have shown throughout the crazy year that was 2021.

It definitely had its ups but I think we can all agree that there quite a few downs as well. We don’t know about you, but we’re ready to put it behind us and take on 2022 like never before.

We have a lot fun stuff lined up for the new year and can’t wait for y’all to see what we’ve been working on. 😎

A snapshot of the Guajillos we used for our latest harissa batch. These juicy sun-dried chilis had a beautifully vibrant ruby red color and totally reeked of the sun 🌞

They are the foundation of our mild harissa, which we take great pride in producing. And look, we get it, lots of people will tell you that harissa is all about the heat it brings to the table but in all honesty if the process and ingredients are right, it is possible to make something that is unconventionally mild yet deliciously flavorful and respectful of its origins… Quite a few people will still get intimidated by the phrase “sun-dried chili paste” because they instantly assume their palate is going to be destroyed by a tsunami of fire. Nobody can deny that traditional harissa is typically spicy but we want to show the world that Tunisian harissa is not unidimensional but rather an entire craft in itself; just like olive oil, wine, beer, cheese, and so on.

Our craft is about living up to the intergenerational standards passed onto our mother by our great-grandmother Zwïta. It’s about obsessing over the ingredients and the process. It’s about constantly asking ourselves how we can improve. It’s about giving people the best value for their money. It’s about being anal about cleaning and sanitation. Finally, it’s about telling our stories in a real way and unapologetically being ourselves without feeling the need to fit into anybody else’s mold.

Thank you all for giving us reason to continue our craft and know that we are always here to be the best we can be for you.

Casually strolling through the city of Nabeul we noticed a truck carrying an enormous load of chilis, what seemed like the Baklouti variety, right in front of the bus station. The truck's driver, aka the chili dealer, was holding a giant bunch of chilis tied together with a string. He handed the heavy bunch to a man with a pink shirt who was the owner of the restaurant الباهية (“El Behia”) 20 meters down the street. He picked a chili off the bunch and began feeling, then smelling it from the outside. He then broke it open and did the same with the inside flesh. Then he took a bite and began masticating the chili in order to assess its flavor and spiciness. He mentioned it was going to be part of his 'oula', i.e. his supply of chilis for the rest of the year. His plan was to grind half of it into a powder for seasoning and use the other half to make traditional harissa (هريسة عربي) for his restaurant. After his thourough inspection, two chili bunches were weighed, the chili dealer was paid, and both went on their ways after some small talk. We spoke to the driver and asked about the chilis he had, he said that the chilis were actually not from the Cap Bon but from Jelma, 200 km south west of Nabeul, in central Tunisia. Today, Jelma is famous for its chilis and that is a testament to how the adoption of chilis and harissa spread beyond the Cap Bon throughout the Tunisian diaspora.

Looking to switch it up for dinner? Try Zwïta Recipe for Casse-Croûte Tounsi (a traditional Tunisian sandwich)!😋 Here’s what you’ll need: Black olives (Kalamata is fine) Olive oil canned tuna Finely chopped cucumbers, tomatoes, and red onions tossed together in olive oil, lemon juice, black pepper, dried mint, and salt 1 small white potato 1 egg Zwita Harissa paste (mild or spicy) 1 baguette Instructions: Cut the small white potato and place it in a small pot as well as an egg and pour in some water until both are completely submerged. Bring the water to a boil. 6-7 minutes into the boil, remove the egg and place it into a container with ice and water so that it cools down quickly. Once cool enough (allow 10 minutes), peel the egg and cut into 4 pieces (or more if you prefer). 20 minutes into the boil, dip a small knife into the potato to check how cooked it is. It should be soft but not too soft while also being firm (but not too firm!). Take it out and dice it into small pieces. In a small container, mix 1 Tbsp Harissa paste (mild or spicy) with 2 tablespoons lemon juice, 1 tablespoon extra virgin olive oil, and 1 tablespoon of vinegar as well as a touch of salt. Alternatively, if you’re feeling crazy, substitute with Harissa Slice off 8-10 inches in length portion of the baguette and cut it in half. Layer the diluted Harissa mix (or Habarissa) onto both sides of the bread. Add some of your pre-prepared salad, try to leave out as much of the juice as possible so your sandwich doesn’t get too soggy. Add some of the diced potatoes to the sandwich. Add the tuna in small chunks into the sandwich. Add the olives into the sandwich. You can also cut them into smaller pieces to spread them out more if you don’t have that many olives on hand.
