Get to know the Houston Chapter Board Members!

John H. Kalfayan, Texas Chefs Association Houston Chapter Master at Arms.

John H. Kalfayan has built a distinguished culinary career rooted in craftsmanship, leadership, and service to others. His passion for barbecue led him to spend 15 years as a pitmaster in Ponca City, Oklahoma, while also competing for 10 years as a member of the Buck and Wing BBQ Rodeo Team.

Dedicated to giving back to the community, John volunteered with Wounded Warriors for three years and has proudly served with Mercy Chefs for the past 12 years, providing meals and support to communities affected by disasters and times of need.

For the past decade, John has been an active member of both the Texas Chefs Association (TCA) and the American Culinary Federation (ACF), where he continues to support the culinary profession through mentorship, education, and community involvement. He currently serves as Protein Chef with Lakeland, bringing decades of experience, passion, and commitment to culinary excellence to his role each day.

Chef Randy Douglas, Texas Chefs Association Houston Chapter Treasurer.

Chef Randy Douglas has over 30 years’ experience and has been working in country clubs for over 15 years all over Texas, from Horseshoe Bay in the hill country, a Yacht club in Kemah, Texas and various top clubs in Houston where he is currently the Executive chef at The Forest Club. Prior to that he has worked at prestigious hotels and restaurants all over from Michelin rated hotels in Napa California to the Bellagio in Las Vegas Nevada to 3 Michelin Star Restaurant Martin Berasategui in San Sebastian Spain.

Get to know the Houston Chapter members!

Chef Vaness Tristan, Texas Chefs Association Houston Chapter Secretary Co-Chair.

Vanessa Tristan is currently the Executive Pastry Chef at The Club at Carlton Woods, in the Woodlands, Texas. Specializing in a wide variety of desserts and baked goods including but not limited to plated desserts, cakes, artisan bread, and chocolate work.

She attended Culinary Institute LeNotre in 2018 and received her Associates Degree in Culinary Arts in 2020. While her time as a student there she earned Scholarships like the Gaston LeNotre, Escoffier, and LeDames de Escoffier Scholarships to name a few. Before her executive roll at The Club at Carlton Woods she decided to go back to school and earn her Associates Degree in Baking and Pastry. She is now a Certified Executive Pastry Chef (CEPC) through the American Culinary Federation and was recognized as part of the Club + Resort Chef "40 Under 40" Class of 2024.

Vanessa has continued her professional development through advanced coursework at L’École Valrhona in New York and is currently pursuing her Certified Baker (CB) designation through the Retail Bakers of America, with the ultimate goal of becoming a Certified Master Baker (CMB). In her free time, she enjoys traveling, reading, and exploring new pastry techniques.

The Culinary School of Fort Worth is hosting an insights event alongside the Fort Worth Food and Wine Foundation where worldwide renowned River Oaks Country Club Executive Chef Charles Carroll, CEC, AAC will be holding a special speech on how to train your Sous Chefs to do your job now and also giving a very special presentation named ''Making Memories''.
