Chicken Biryani Recipe
Ingredients:
For Marination:
500g chicken (cut into pieces)
Β½ cup yogurt
1 tbsp ginger-garlic paste
1 tsp red chili powder
Β½ tsp turmeric powder
1 tsp garam masala
1 tsp salt
1 tbsp lemon juice
For Rice:
2 cups basmati rice (soaked for 30 mins)
4 cups water
2-3 green cardamoms
1 bay leaf
1-inch cinnamon stick
Β½ tsp salt
For Cooking:
2 tbsp ghee or oil
1 large onion (sliced)
1 tomato (chopped)
1 green chili (slit)
Β½ tsp cumin seeds
1 tsp coriander powder
Β½ tsp garam masala
ΒΌ cup chopped mint leaves
ΒΌ cup chopped coriander leaves
A pinch of saffron soaked in 2 tbsp warm milk (optional)
Method:
1. Marinate the Chicken:
In a bowl, mix chicken with yogurt, ginger-garlic paste, red chili powder, turmeric, garam masala, salt, and lemon juice.
Cover and marinate for at least 1 hour (overnight for best results).
2. Cook the Rice:
Boil water in a pot with salt, cardamoms, bay leaf, and cinnamon stick.
Add soaked rice and cook until 80% done (grains should be firm).
Drain and keep aside.
3. Prepare the Masala:
Heat ghee/oil in a pan. Add cumin seeds and sliced onions. SautΓ© until golden brown.
Add tomatoes and cook until soft.
Add the marinated chicken and cook until tender.
Add coriander powder, garam masala, green chili, mint, and coriander leaves. Mix well.
4. Layering & Dum Cooking:
In a heavy-bottomed pan, add a layer of chicken masala.
Add a layer of rice over the chicken. Sprinkle saffron milk on top.
Cover the pan with a tight lid and cook on low heat for 15-20 minutes (dum cooking).
5. Serving:
Gently fluff the biryani and serve hot with raita or salad.
