Aji Verde Peruvian Green Sauce 🥬
This spicy, creamy green sauce is a bold Peruvian favorite. Bursting with fresh herbs, garlic, and a zesty kick, it's perfect for grilled meats, fries, or dipping anything in sight.
Ingredients
For the Sauce
• 1 cup fresh cilantro, packed
• 1–2 jalapeños, seeded for less heat
• 2 cloves garlic
• ½ cup mayonnaise
• ¼ cup sour cream
• 2 tbsp grated Parmesan cheese
• 1 tbsp lime juice
• 1 tbsp olive oil
• ¼ tsp salt
• ⅛ tsp black pepper
• 1–2 tsp white vinegar (optional, for extra tang)
Instructions
Wash the cilantro thoroughly and pat it dry. Remove any thick stems.
In a blender or food processor, combine cilantro, jalapeños, garlic, mayonnaise, sour cream, Parmesan, lime juice, olive oil, salt, and pepper.
Blend on high speed until the sauce is completely smooth and creamy.
Taste and adjust seasoning as needed. Add white vinegar if you like a tangier bite.
For a thinner sauce, blend in a small splash of water or lime juice.
Transfer to a jar or container with a lid.
Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to blend.
Serve as a dipping sauce, drizzle over grilled chicken or steak, or enjoy with fries and roasted veggies.
Store in the fridge for up to 5 days. Shake or stir before each use.
