I did a thing I’m super proud of myself for getting it done. I made a 4-layered bourbon peach cobbler cheesecake cake. It almost took me out because I’m no cake decorator but I love to bake, and I challenged myself to figure it out. A friend asked for a birthday cake, and I said I do NOT do cakes. There are a million bakers out here, but I have experimented with cheesecake cakes and I’m still working on it. We talked about the kind that she wanted, and my brain went into creativity mode. What started off as a simple request turned into one of my favorite cakes to make.
Layer 1: Classic cheesecake topped with a bourbon cream cheese icing and bourbon peach cobbler filling
Layer 2: Homemade yellow cake topped with a bourbon brown butter glaze
Layer 3: cheesecake no crust with the bourbon cream cheese frosting and bourbon peach cobbler filling
Layer 4: Homemade yellow cake with the bourbon brown butter glaze
The whole cake was iced in the bourbon cream cheese icing and topped with the bourbon brown butter glaze and more bourbon peach cobbler filling.
This cake was a 50/10. It was definitely gone by the time I started cutting it.
