Grubido Spotlight: This beautiful dessert was inspired by the traditional Norwegian strawberry and cream. The meringue is based on sugar, water, and some stabilizing powder, but the recipe is secret. To eat the dish you have to break the meringue because the chefs dip the meringue in liquid nitrogen to get a cold and crisp texture. Underneath the merengue is mascarpone cheese, caramelized organic oats, Tasmanian pepper berries and crystalized white chocolate. The dessert was toped of with a cold strawberry soup based on fresh Norwegian strawberries. What a treat!
