Piña Colada Cake

2 cups flour
11/2 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
Mix all dry well

Then add..
2 eggs beaten
20 oz can crushed pineapple
1 tablespoon lemon extract
2 tablespoons of lemon juice 

Batter in 9 x 13 dish and top with, but do not mix 
1 cup white sugar
1 cup of toasted almonds slices
1 cup of sweetened coconut 

Bake at 350 degrees 45 minutes or until golden Brown with the Clean toothpick coming out

For the liquid icing heat up in sauce pan

1 stick of unsalted butter melted
1/2 cup sugar
1 tablespoon Vanilla
1 cup evaporated milk

Poor liquid icing on and enjoy
