Here's a beef chuck roast stew that simmered for 14 hours with beef that falls apart, baby carrots, potatoes, onions, fresh garlic, broth, and of course all my favorite seasonings; smoked paprika, smoked maple, garlic, onion powder, parsley, salt and pepper and a touch of chipotle. This did not disappoint!

Homemade French toast is just one of those meals that hit the spot. I used bakery selected raisin cinnamon swirl bread in a cinnamon sugar mixture of 3 duck eggs and some heavy whipping cream. This bread was starting to lose its softness as any fresh bread does, and this was the perfect fix! A little longer of a soak to really absorb it into each slice and then cooked to perfection. (Be thorough with cooking duck eggs. They have higher salmonella risks)

An interesting breakfast at the local bakery in a small town of Austria. They baked breakfast sandwiches in the form of little pizzas and it was made fresh to order with a lovely crunch to it!

Roasted potato and turkey casserole!

I had some things I needed to get rid of: a big jar of bread and butter sliced pickles and a bag of very wrinkly potatoes 🥔

Peel potatoes and cube them
Cover with oil, salt, pepper, garlic, paprika and onion powder
Bake at 425° for 35 minutes

Cook fresh onions and garlic in oil
Add ground turkey
Add entire jar of pickles including the juice
Mix in Parmesan cheese
Brown the turkey in the juice until it is a sloppy Joe consistency. Not soupy, not too dry either.

Remove the roasted potatoes and add into the bottom of your oiled pan (I had enough for two pans, but you can also layer it instead of dividing them)
Add shredded or grated sharp cheddar
Add your juicy turkey and pickle mixture
Top with more sharp cheddar

Bake in the oven st 375° for 25 minutes
Allow to cool before serving so it thickens up

My mental health assignment for this week was to do something you would've loved as a child that reminds you of a happy memory from your childhood. When I was younger, my family and I would all decorate toaster strudels with icing together for breakfast. No perfect designs, clumsy thick lines and goofy images that you almost had to question to know what they were supposed to be. And the funniest part was the hotter the strudels, the quicker the icing melted into globs of unidentifiable puddles. I baked this cake all by myself, giggling the whole time at how horrendous my darth maul design was and it was so therapeutic. I didn't even want to eat the cake I genuinely made it just for the experience. I am still laughing at how silly it looks, and even more so that I am willing to post it but I don't want to forget about this little experience when I scroll through my history of kitchen time on this page. So enjoy a clumsy little sentimental memory wrapped into a chocolate lemon cake 😂
