Here we grow again! For those of you that have toured our facility, you know that we name our kettles after Star Wars characters, because, well… Star Wars rules. We have a new character in-house and prepping for install - a 1,600 gallon kettle nicknamed the Sarlacc, after the super massive sand-monster of Tatooine that devours everything that falls into its jaws. All hail the great sauce monster Sarlacc!

Motherlode is expanding, and we need more cooks! At Motherlode Co-Packing, we cook and package various condiments, from tasty dressings and BBQ sauces to melt-your-face-off hot sauces! The Kettle Cook is responsible for transfer of work in progress to heating vessels, heating them to the proper cooking temperature as outlined by the formulation's guidelines, and getting the work approved for packaging. This position will also be responsible for cleaning the kettles between batches and matching quality parameters of each batch in progress before releasing for packaging.

JOB RESPONSIBILITIES
Transfer work in progress from batching mix tank to the heating vessel
Coordinate with production manager and/or shift leader in packaging when to heat kettles and have them ready for packaging "just in time."
Heat batches of varying products according to the formulation parameters, many times managing up to 4 kettles at a time.
Perform pH testing, brix testing, and viscosity testing of the product at processing temperature, adding additional water to the kettle as needed to match processing parameters outlined by the formula.
Work with a supervisor that has proper sensory analysis training to achieve final approval to release for packaging
Maintain kettle temperature throughout the packaging process
Rinse, clean, and sanitize the kettle after packaging has fully emptied and disconnected from the kettle

QUALIFICATIONS / REQUIREMENTS
2+ years experience in Food Manufacturing or Food Preparation

Thorough knowledge of food manufacturing equipment and food preparation.

Clear understanding of food safety and chemical safety.

Working knowledge of sensory evaluation procedures

Able to operate simple chemical and analytical tools and laboratory equipment (refractometer, pH meter, and various measuring devices.)

Strong analytical, prioritizing, interpersonal, problem-solving & planning skills.

Strong verbal and written communication skills

Ability to develop and maintain collaborative relationships with peers and colleagues across the organization

Ability to work well autonomously and within a team in a fast-paced and deadline-oriented environment.

Ability to work with and influence peers and management.

Self-motivated with critical attention to detail, deadlines and reporting.

This position is a reliable, responsible, and proactive individual who is responsible for helping bottle tasty sauces and condiments, then prepare them for shipment.

Essential Functions & Responsibilities:

• Assemble containers to be used for packaging.

• Package product into containers.

• Box and palletize containers to specifications.

• Inspect product and labels to verify date codes. Ensure tight caps prior to packaging.

• Ensure all bottles are wiped clean prior to packaging.

• Maintain production records.

• Participate in housekeeping duties related to the production line.

• Ensure compliance with food safety and quality guidelines.

• Acts in a stewardship capacity for the Company, works as a functional member of the team, has ability to self-direct and self-regulate their workday.

• Other duties as assigned
