A Quick Reflection After 10 Years in Business
After a decade in business, it’s hard not to look back at how far we’ve come. So many things have changed in time, some have stayed the same.
What Has Changed:
The Home of McGrath Cheese Company
We started out safely at Sprout Creek Farm, a place where we essentially grew up. We learned that cheese was our passion. We made the move to Churchtown Dairy after a year and have planted our roots there. We’re so thankful to Churchtown for carving out space for us to call home.
The Dairy Industry:
Milk from small, grass fed dairies was a lot easier to come by a decade ago. We have purchased our milk from over half a dozen different dairies in that time and we are grateful to have worked with each one. Some have come and gone but we still call all of those farmers our friends. They are the backbone that makes our cheeses so special.
The Cheeses:
We started out with an idea of making a soft, bloomy rind cheese that we’d name after Colin’s mother. In 10 years, we have made 13 different cheeses (5 have since retired). We’ve had to adjust recipes and techniques time and time again.
We’ve Changed
We were 30 and 23 when we started McGrath Cheese Company. We had 2 lifted trucks and a dream of making incredible cheeses. This week, we will be turning 41 and 34. We have lived through cheese issues, a world wide pandemic, multiple moves, loved ones passing, families getting bigger and dairies closing. We will never stop growing and changing, it’s part of life.
What Hasn’t Changed:
-Our LOVE for the cheeses we make
-Our utmost respect for our dairy farmers and the work they put in everyday
-Our ability to adapt to the changes
-It’s still the same four hands making all of this cheese
Thank you to all of our market and tasting staff, past and present, who have helped us continue our reach throughout the Hudson Valley and beyond. To the small farm stores, the farm to table restaurants, the specialty grocery chains and the direct customers, we wouldn’t be here without you.
