Tomorrow marks the return of the Brat Stand! We will be operating a little differently this year, as a grab and go option, but hope it can serve more people this way. Open Mon-Fri as long as weather permits from 11am-2pm. We'll be showcasing our newest line of smoked sausages - The Smoked Hog! To start with we'll have Original and JalapeƱo Cheese with more flavors to come. We'll also have jerky, beef sticks and more in the cooler ready to go. We would like to encourage truckers to stop as well and will try to keep the street right in front of the locker clear so you can just pull up and hop out.

What is the value of a locally raised half beef purchased through us or one of the many farmers who bring animals to us? How does it compare to the price of purchasing by the piece from other sources? Below is a breakdown of an average size half of beef that we see here on a daily basis. This is a standard selection of cuts which include a mix of bone in and boneless cuts. This is one single animal, cuts selected by you and processed for you and no one else, from someone who's name ends up on the final receipt. Our beef are dry aged 2 weeks, then cut as opposed to cut and then wet aged in a bag after the fact. There is no quality comparison in the final product. And at a cost of only about $300 (Just over a $1 per pound on the finished product listed below) over a local grocery store, the value is closer than you might think. We have a half beef available to fill your freezer. It is in the locker and ready to cut next week. The price for the beef is $4.20/lb on the hanging weight. The processing typically runs about $1.35/lb. Hanging weight on this half is 451 pounds. So, this half will run about $2500. If not spoken for by 5 pm today, it will get cut and go into our freezers.
