This Black History Month, we honor a TRUE pioneer. Travis Chicago Style Polish Sausage & Bear Burger Est. 1974

In 1971, a young man from Birmingham with a vision stepped into the food game. By December 1974, he was officially rolling, and in 1975 he served one of his first biggest events at the Foot Wash in Uniontown, AL — where church let out and he was the ONLY food truck there. That moment? History.

For nearly 17 years, while Birmingham & Jefferson County didn’t allow food trucks, Travis Holmes stood alone as the only truck in the city. Back when licenses were just $25 (1979) and they were called “lunch wagons,” he was already building a legacy.

Born and raised in Birmingham, Travis took his talents to Chicago at 21, where the flavor and grind of Chicago — especially the iconic Maxwell Street — inspired what would become his Chicago-style concept. That’s where the vision expanded. That’s where history deepened.

From one truck…

To 50+ years of excellence.
