Niemczyk Gardens Niemczyk Gardens is a family owned and operated farm with 3 generations currently running the farm. Paul Farmers Market. We are experienced vegetable growers.

The Farm operations consist of 30 Acre Produce Farm, Retail Greenhouse, Roadside Vegetable Stand and The St. We have been producing home grown vegetables since 1977. With 37 years of proudly growing fresh and safe vegetables for our community, we are breaking into a new venue of providing shares to our produce. This program is called CSA(Community Supported Agriculture).

Lemon Thyme Roasted Potatoes

Ingredients:

3 lbs little yellow potatoes
2 lemons, zested and juiced
¼ cup olive oil
2 tablespoons fresh thyme leaves, or 2 tsp dried thyme
1 teaspoon salt
½ teaspoon black pepper

Directions:

1. Preheat your oven to 400°F and line a large rimmed baking sheet with parchment paper or aluminum foil.

2. Cut the little potatoes into quarters (4 pieces).
In a large bowl whisk together the lemon juice, olive oil, thyme leaves, salt and black pepper.

3. Add the cut potatoes and toss to coat the potatoes evenly.

4. Spread the potatoes out in a single layer on the prepared baking sheet. If needed, use two sheet pans and rotate the pans when you flip the potatoes.

5. Pour any excess oil and lemon juice over the potatoes.

6. Roast the potatoes for 20 minutes and then gently flip them.

7. Roast for another 20-30 minutes until the potatoes have crisp edges and are fork tender.

8. Garnish with some extra salt, a little lemon zest and fresh parsley. Serve with your favorite main dish and enjoy!

Fresh Mint Chocolate Chip Cookies

Ingredients:

1/2 cup (1 stick) unsalted butter
1/2 cup firmly packed fresh mint, roughly chopped
1/2 cup firmly packed dark brown sugar
1/2 cup granulated sugar
1 egg, at room temperature
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon fine sea salt
heaping 1/2 cup semisweet chocolate chips

Directions:
1. Place the butter and mint in a small saucepan over medium heat. Melt the butter, swirling occasionally.

2. After about 2-3 minutes, when you can smell the mint, turn the heat off and let the butter continue to steep for 30 minutes.

3. Strain the butter, pressing the leaves to extract all of the butter from the leaves.

4. Meanwhile, line two baking sheets with parchment paper, and set aside.

5. In the bowl of a stand mixer, add the butter and sugars. Beat until light and creamy, 3-5 minutes.

6. Next, add the egg and vanilla and beat for an additional minute.

7. In a separate bowl, whisk together the flour, baking soda and salt.

8. Slowly add the dry ingredients to the mixer while running, stopping to scrape the bowl as necessary.

9. Finally, add the chocolate chips and mix just until combined.

10. Remove the cookie dough from the bowl, wrap in plastic wrap, and press flat into a disk. Chill for 1 hour.

11. Preheat the oven to 350.

12. Divide the dough into 12 equal portions, rolling into 12 balls. Space 6 balls on each cookie sheet (the cookies will spread considerably).

13. Bake for 11-12 minutes, rotating the pans half-way through.

14. Let cool on the baking sheet for 2 minutes, and then move to a cooling rack to cool completely.

Mustard Greens Dip

Ingredients:

2 heads mustard greens
3 tablespoons olive oil
1/2 can drained artichoke hearts
1/2 cup roasted red peppers
2 teaspoons salt, divided in half
1 teaspoon cracked black pepper
5 ounces Italian Herb Philadelphia Cooking Creme
4 ounces firm tofu that has been cubed and pressed
1/2 red onion, finely diced
1 tablespoon dried basil
1 tablespoon dried oregano
1 tablespoon dried thyme
1/2 cup Parmesan cheese, grated

Directions:

1. Preheat oven to 350 degrees.

2. Slice heads of mustard greens into 1-inch strips.

3. Heat olive oil in a large skillet and saute the greens on medium heat for 12 minutes.

4. Add in the artichoke hearts, roasted red peppers, 1 teaspoon of salt and pepper and cook an additional 7 minutes.

5. Remove from heat and place the vegetable mixture in a food processor.

6. To the vegetable mixture, add cooking creme, tofu, red onion, basil, oregano, thyme and 1 teaspoon of salt.

7. Pulse until thoroughly combined.

8. Place mixture into a small baking dish (a 4.5 cup casserole dish) and cover it with Parmesan cheese.

9. Bake at 350 degrees for 20 minutes until cheese is golden brown.

Sugar Snap Pea & Radish Salad

Ingredients:

1 garlic clove, smashed and peeled
3 tbsp lemon juice
1 tbsp red wine vinegar
1 tsp dijon mustard
kosher salt
½ cup extra virgin olive oil
freshly ground black pepper
1 lb sugar snap peas, strings removed, cut into ½-inch pieces diagonally
1 bunch radishes, trimmed, and sliced thin
2 oz baby arugula (about 2 large handfuls)
4 oz feta, crumbled

Directions:

1. Combine garlic clove, lemon juice, vinegar, mustard and ½ teaspoon of kosher salt in a jar or large glass measuring cup. Whisk in olive oil, then season with black pepper and more salt to taste. Set aside to let garlic marinate while you assemble the salad.

2. In a large bowl, combine snap peas, radishes, arugula and feta.

3. Remove garlic clove from dressing and discard. Add two-thirds of dressing to salad then toss to combine. Taste and add more dressing if desired. Serve.

Lemon Oregano Chicken

Ingredients:

• For the Chicken -
2 lbs bone-in, skin-on chicken thighs about 6 thighs, patted dry
1.5 tsp kosher salt divided
0.75 tsp freshly ground black pepper
2 tbsp olive oil
4 cloves garlic smashed and peeled

• For the Sauce -
3 tbsp fresh oregano roughly chopped, plus more for serving
1 lemon zest and 3 tbsp juice
0.5 cup dry white wine such as Pinot Grigio
0.5 cup unsalted chicken broth
2 tbsp unsalted butter cold, cut into pieces

Directions:

1. Pat the chicken thighs completely dry with paper towels. This is crucial for crispy skin. Season both sides with 1 teaspoon salt and all the pepper. Let sit at room temperature while you prep the remaining ingredients.

2. Heat olive oil in a large oven-safe skillet over medium-high heat until shimmering. Add chicken skin-side down and cook without moving for 6-7 minutes until the skin is deeply golden and releases easily from the pan. Flip and cook 2 minutes more.

3. Transfer to a plate; the chicken will not be fully cooked.

4. Pour off all but 2 tablespoons of fat from the pan. Reduce heat to medium and add the smashed garlic.

5. Cook 1 minute until fragrant and just starting to color. Add white wine and scrape up any browned bits with a wooden spoon. Simmer for 3 minutes until reduced by half.

6. Stir in chicken broth, lemon zest, lemon juice, and remaining 1/2 teaspoon salt. Nestle the chicken back into the pan skin-side up, along with any accumulated juices. Scatter 2 tablespoons oregano around the pan. Roast at 425F for 20-25 minutes until the thickest part of the thigh registers 175F on an instant-read thermometer.

7. Transfer the chicken to a serving platter and tent loosely with foil. Remove and discard the garlic cloves. Bring the pan juices to a simmer over medium heat and reduce for 2-3 minutes until slightly thickened. Remove from heat and swirl in the cold butter until glossy. Taste and adjust seasoning.

8. Spoon the sauce over the chicken and sprinkle with the remaining fresh oregano. Serve immediately with crusty bread to soak up every drop.

Bok Choy & Beef Stir Fry

Ingredients:
1 pound beef sirloin thinly sliced
1 tablespoon soy sauce
1 tablespoon cornstarch
2 tablespoons vegetable oil
3 cloves garlic minced
1 inch ginger minced
4 cups bok choy chopped
1 red bell pepper sliced
1 carrot julienned
2 tablespoons oyster sauce
1 tablespoon sesame oil
Salt and pepper to taste
Cooked rice for serving

Directions:
1. In a medium bowl, combine the sliced beef, soy sauce, and cornstarch. Mix well and let it marinate for about 15 minutes.

2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef and stir-fry for about 3-4 minutes until browned. Remove the beef from the skillet and set aside.

3. In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.

4. Add the chopped bok choy, sliced red bell pepper, and julienned carrot to the skillet. Stir-fry for 3-5 minutes until the vegetables are tender-crisp.

5. Return the cooked beef to the skillet. Pour in the oyster sauce and sesame oil, and toss everything together until well combined. Season with salt and pepper to taste.

6. Serve the stir-fried beef and bok choy over cooked rice.

Just a friendly reminder that CSA share pick up starts this week! Please plan to arrive on your pre-selected day (Tuesdays, Wednesdays, or Thursdays).

We pick your produce fresh each morning before pick up, so we ask that you please wait to arrive until 12:00pm to ensure we have all the produce ready for you! Pick up will be open from 12:00pm to 6:00pm.

We can’t wait to see you, and we greatly appreciate your support to our farm this season!
