1 1/2 cups buttermilk⁠
2 large eggs⁠
1/2 teaspoon vanilla⁠
4 tablespoons melted butter⁠
Vegetable oil for griddle⁠
⁠
šŸ„Chocolate sauce and garnish⁠
⁠
1/2 cup heavy cream⁠
1/2 cup semi-sweet chocolate morsels⁠
2 tablespoons butter at room temperature⁠
1/4 teaspoon cinnamon⁠
1/4 teaspoon salt⁠
1/2 cup slivered almonds, lightly toasted⁠
Confectioner’s sugar⁠

šŸ’„INSTRUCTIONS⁠
In a large bowl, mix flours, baking powder, baking soda, salt and sugar. In a separate bowl, whisk together buttermilk, eggs, vanilla and butter. Make a well in the dry ingredients and pour in the wet ingredients. Stir together with a wooden spoon or silicone spatula until just incorporated. Set aside while you assemble the chocolate sauce.⁠

In a small saucepan set over medium heat, bring cream to a simmer, then reduce heat to low. Stir in chocolate morsels, butter, cinnamon and salt until smooth. Remove from the heat and set aside, or keep warm over very low heat. The sauce will thicken as it cools.⁠

Heat a griddle pan over medium heat and brush with oil. Scoop 1/4-cup portions of batter onto the griddle, fitting 4 to 5 cakes at a time. Cook until bubbles form on the surface and edges are set, about 3 minutes. Flip and cook until brown on the opposite side, about 2 minutes. If the outsides of the cakes are too brown before the insides are finished cooking, lower the heat. Remove to a plate and cover with foil, or hold in a warm oven. Continue cooking in batches until all of the batter is used.⁠

Serve cakes drizzled with chocolate sauce and garnished with toasted almonds and sugar.⁠

šŸ„If you ask me, there is NOTHING better than chocolate + peanut butter. These simple two-ingredient mini chocolate peanut cups take that flavor combo to a whole new level.⁠

šŸ’«I used 60% dark chocolate chips (Ghirardelli is my favorite brand) but you could substitute any good-quality dark chocolate. Choose a natural peanut butter made from just peanuts and salt, and you’re good to go! If you (like me) enjoy a bit of salt with your sweet, you can even sprinkle on some sea salt flakes.⁠

āœ…Ingredient⁠
CHOCOLATE⁠
1 cup dark chocolate, chopped, melted⁠
¼ cup coconut oil⁠
1 teaspoon vanilla extract⁠

PEANUT BUTTER⁠
½ cup natural peanut butter⁠
¼ cup honey⁠
2 tablespoons coconut oil⁠
⁠
SPECIAL EQUIPMENT⁠
muffin tin liner⁠

Line a muffin tin with muffin tin liners.⁠
In a bowl or measuring cup, add the dark chocolate and ¼ cup (50 g) coconut oil.⁠
Stir in vanilla extract.⁠
Microwave for 30-second intervals until melted, stirring each time.⁠
Pour half of the chocolate mixture into the liners (just enough to cover the whole bottom). Save the other half for the top layer.⁠
Freeze for 15 minutes.⁠
In a bowl or measuring cup, add the peanut butter, honey, and 2 tablespoons coconut oil.⁠
Microwave 15 seconds or until slightly melted and pourable.⁠
Pour mixture evenly into the muffin tin.⁠
Freeze for 5 minutes.⁠
Pour remaining chocolate mixture on top of the peanut butter layer.⁠
Freeze until firm about 1 hour.⁠

ā™ØļøI like my burgers to be hot, juicy and full of flavor. There’s nothing wrong with fast food, but I do find that there’s no real flavor in the beef. I get that they’re convenient; I consider these burgers fast-ISH food. I can make em, grill em and get them on the table faster than it would take to run down to the local burger joint.⁠

2 pounds ground chuck⁠
½ cup crushed saltine crackers or Panko breadcrumbs⁠
1 large egg⁠
2 tablespoons Worcestershire sauce⁠
2 tablespoons milk⁠
1 teaspoon salt⁠
1 teaspoon garlic powder⁠
1 teaspoon onion powder⁠
½ teaspoon black pepper⁠

Set out a large mixing bowl. Add in the ground beef, crushed crackers, egg, Worcestershire sauce, milk, salt, garlic powder, onion powder, and pepper. Mix by hand until the meat mixture is very smooth.⁠
Press the meat down in the bowl, into an even disk. Use a knife to cut and divide the hamburger patty mixture into 6 – 1/3 pound grill or skillet patties, or 12 thin griddle patties.⁠
Set out a baking sheet, lined with wax paper or foil, to hold the patties. One at a time, gather the patty mix and press firmly into patties. Shape them just slightly larger than the buns you plan to use, to account for shrinkage during cooking. Set the patties on the baking sheet. Use a spoon to press a dent in the center of each patty so they don't puff up as they cook. If you need to stack the patties separate them with a sheet of wax paper.⁠
Preheat the grill or a skillet to medium heat. (Approximately 350-400 degrees F.)⁠
For thick patties: Grill or fry the patties for 3-4 minutes per side.⁠
For thin patties: Cook on the griddle for 2 minutes per side.⁠
⁠
Stack the hot patties on hamburgers buns, and top with your favorite hamburgers toppings. Serve warm.⁠

Banana Chocolate Chip Cupcakes with Chocolate Ganache

āœ…For the Cupcakes
1 cups and 1/2 cake flour sifted and leveled
3/4 teaspoon baking soda
1/4 teaspoon cinnamon
1/4 teaspoon salt
1/3 cup unsalted butter softened to room temperature
1/2 cup granulated sugar
1/4 cup packed brown sugar
2 teaspoons vanilla
2 large eggs room temperature
3/4 cup bananas blended in a food processor, about 2 large or 3 small bananas
1/3 cup buttermilk room temperature (or 1/3 cup milk mixed with 1 teaspoon vinegar)
1/2 cup mini chocolate chips

āœ…Instructions
Preheat the oven to 350F degrees and line two muffin tins with muffin papers. You'll end up with about 14-16 cupcakes total.
In a large bowl whisk together the flour, baking soda, cinnamon and salt. Set aside
In a separate large bowl using a hand held or stand mixer on medium speed, beat together the butter and sugars until fluffy (about 2-3 minutes). Add in the vanilla and eggs and continue beating. Turn off the mixer and stir in the bananas. With the mixer on low speed carefully add in the flour mixture until almost combined, followed by the milk. Once smooth and no lumps remain, turn off the mixer and stir in the chocolate chips using a wooden spoon or rubber spatula
Spoon the cupcake batter into the prepared muffin tins, filling each cavity about 2/3 to 3/4 full. Bake in the preheated oven for 15-18 minutes or until an inserted toothpick comes out clean (apart from any melted chocolate chips)
Allow to cool in the muffin tin for 10 minutes before removing and cooling on a wire rack.
To make the buttercream, in a large bowl whisk together the cocoa powder and icing sugar. In a separate large bowl using a stand or hand held electric mixer - beat the butter until light and fluffy and no lumps remain. Add in vanilla and salt. With the mixer on medium speed, add in the cocoa and icing sugar about 1/2 cup at a time. Turn the mixer to high and beat in the whipped cream until fluffy. Add in a little extra icing sugar or whipped cream as needed to get the desired consistency.

Place a heat-proof bowl over a pot of simmering water, and whisk together the chocolate, cream, and espresso powder until chocolate is melted

These chocolate oreo parfaits were kind of an accident the first time I made them.
I was attempting a somewhat fancy classic mousse and somehow ended up here— chocolate whipped cream and crushed oreos layers together into glasses.

šŸ’„Such a tasty accident! šŸ˜‚

I scrapped the other recipe idea and I’m sharing this one with you instead.Ā It’s so basic, so easy to make, and SO DELICIOUS! I love the combination of mousse-like chocolate whipped cream and crunchy cookies. It’s a fun dessert that’ll delight kids and adults alike.

āœ…Ingredients

* 8Ā ozĀ mascarpone cheese
* 1Ā cupĀ heavy whipping cream
* 1/2Ā cupĀ powdered sugar
* 1Ā tspĀ vanilla extract
* 8Ā ozĀ COOL WhipĀ whipped topping
* 4Ā ozĀ baking dark chocolate bar
* 4Ā ozĀ baking white chocolate bar
* 12Ā Oreo cookies

āœ…Instructions

* (Use whisk attachment for frosting.) In a bowl of an electric mixer, add mascarpone cheese, heavy whipping cream, and vanilla extract.Ā 
* Start on low speed to mix the ingredients and gradually increase the speed over a few seconds to medium-high. Beat until it starts to thicken and lower the speed to add sugar.
* Pour in sugar and raise the speed again. Beat on medium-high speed until stiff peaks form and gradually lower the speed, over a couple of seconds. Do not walk away, this will be ready fast!
Fold in COOL whip topping into the whipped mixture and refrigerate for about an hour.
Melt the dark and white chocolate bars separately. You can use a microwave just make sure to heat it through on half power and in the increments of 45-30 seconds, stirring in between each increment.Let chocolates cool a bit.
Divide whipped mousse mixture in half and gradually stir/whisk in dark and white chocolates into each half by drizzling the chocolate in while stirring.


To prepare parfaits
šŸ’ÆTransfer each chocolate mousse into a separate piping bag
šŸ’ÆCrush Oreo cookies
šŸ’ÆLayer each mousse and cookies on top of each other.Ā ā€Øā€Øā‰ļøYou can create 3 large parfaits or 6 small ones.

Japanese Pumpkin Cheesecake
This golden color Japanese Pumpkin Cheesecake would totally make you fall in love with this coziest fall season.
The crust is made with lotus biscoff crackers which has the distinctive deep caramel flavors, nutmeg, and cinnamon. For an extra boost of love, I also mixed in crushed pecan.
The body of the cheesecake is made with Japanese kabocha squash which has a creamy buttery chestnut flavor. Kabocha has lots of vitamin A and it is very low in calories. Besides the must have pumpkin spice, ginger, cinnamon and nutmeg , I added Fiji coffee rum and lemon salt to further deepen the love.
I topped off the golden color pumpkin cheesecake with fallen leaves made with butter pie dough.

16 oz uncooked linguine
1 can (18.5 oz) Progressoā„¢ Traditional New England clam chowder
1 cup milk
1/2 cup shredded Parmesan cheese (2 oz)
2 cloves ,Ā minced
2 tablespoons olive oil
1 1/2 lb uncooked peeled deveined large shrimp, tails peeledĀ 
1 package (8 oz) sliced fresh mushrooms (3 cups)
4 medium green onions, chopped (1/4 cup)
1/4 to 1/2 teaspoon crushed red pepper flakes
1/2 cup chopped fresh parsley
Salt and pepper to taste, if desired
1/2 cup shredded Parmesan cheese (2 oz), if desired

Directions šŸ’„
Prevent your screen from going dark while you cook.
In 5- to 6-quart Dutch oven, cook linguine as directed on package. Drain well; return to Dutch oven and cover to keep warm.
Meanwhile, in blender, place clam chowder, milk, 1/2 cup Parmesan cheese and the garlic; blend on medium speed until mixture is smooth. Set aside.
In 12-inch nonstick skillet or wok, heat oil over medium-high heat until hot. Add shrimp, mushrooms and onions; cook about 5 minutes, stirring frequently, until shrimp turn pink.
Stir in pepper flakes and soup mixture; cook until thoroughly heated. Stir in parsley. Add salt and pepper to taste.
Pour over cooked linguine in Dutch oven; toss gently to coat. Top individual servings with Parmesan cheese.
Use preminced garlic that comes in small glass jars to save time.You can use a tablespoon of dried parsley flakes for the fresh for a slightly different flavor

Is it a muffin? Is it a cupcake? It’s both! And these blueberry muffin cupcakes with lemon cream cheese frosting are perfect for a brunch or shower party.

āœ…Ingredients

šŸ„FOR THE CUPCAKES:
1/2 cup unsalted butter (113 grams)
3/4 cup granulated sugar (170 grams)
3/4 cup buttermilk (177 ml, 6 fl oz)
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour (250 grams)
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 dry pint blueberries

šŸ„FOR THE FROSTING:
8 ounces cream cheese (227 grams), at room temperature
1/2 cup unsalted butter (113 grams), at room temperature
4 cups powdered sugar (455 grams), sifted
1 tablespoon milk or heavy cream
Zest of 1 lemon
1 teaspoon vanilla extract
1/2 teaspoon lemon extract , optional
Instructions

āœ…TO MAKE THE CUPCAKES:

Preheat oven to 400 degrees F. Line a muffin pan with paper liners or grease with butter.
In a small saucepan, cook the butter over medium low heat until browned, swirling the pan as needed to promote even cooking. Set aside to cool.
In a bowl, sift together the flour, baking powder, baking soda, and salt. In another bowl, combine the browned butter, 3/4 cup sugar, and buttermilk. Whisk in the eggs and vanilla extract until smooth. Add to the dry ingredients and stir until just combined. Fold in the blueberries.
Spoon the batter into the prepared muffin pan, filling each cup 3/4 full. Bake until golden and a toothpick inserted comes out with dry crumbs, 15-18 minutes. Cool in the pan for a few minutes, then turn out onto a wire rack to cool completely.

āœ…TO MAKE THE FROSTING:
Beat together the butter and cream cheese until smooth. Add the powdered sugar, milk or cream, lemon zest, vanilla extract and lemon extract (if using). Beat at medium high speed for 2-3 minutes until light and creamy.
Frost the cupcakes with the cream cheese buttercream. Garnish with fresh blueberries, if desired.
Store cupcakes in the fridge for up to a few days.

The spices that should be included in the classic meatball mixture are as follows;⁠

MEATBALL RECIPE⁠
To make meatballs at home, first, put 2 pounds of minced meat in a deep bowl where you can mix it. Then add the egg and breadcrumbs into it. After mixing all the ingredients, add the meatball mixture or all the spices you want. Continue the kneading process until all the spices are absorbed all over the ground meat. After the meatballs have the consistency, give them the shape you want in your palm.⁠

Fry,⁠
Put the meatballs you prepared in the oil in the heated pan.⁠
BBQ, If you are going to cook on a BBQ, be careful the meatballs will cook quickly outside and it may be raw inside. You should maybe make them thinner for bbq. ⁠
Baked, You can also cook in the oven. Preheat the oven to 350 degrees F (175 degrees C). Roll mixture into balls and place on a nonstick baking sheet. Bake in the preheated oven until browned, about 20-30 minutes. Enjoy.!
