Maple Ice Cream
Whisk together and freeze in an ice cream maker:
2 cups heavy cream
1 cup whole milk
3/4 cup dark robust or very dark maple syrup
1/2 teaspoon sea salt
1 teaspoon vanilla
Maple Sugar Walnuts
Pour desired amount of walnuts into a heavy bottomed pan.
Add maple syrup so that it comes up to the level of nuts, but not over.
Boil while stirring until the hard crack stage on a candy thermometer.
Remove from heat and stir vigorously until the mixture lightens and begins to dry.
Pour nuts out on a cookie sheet to separate and cool.
Sprinkle on ice cream, yogurt, salads or eat as is.
