I am very impressed with Butcher box. Their chicken nuggets have no iron. The enriched breading on most chicken nuggets usually boost the iron content in them. This is one of the very few that I found to have none.

Food Combining For Optimal Iron Control.

1. Avoid having Iron rich foods at the same time as Vitamin C rich foods. Eat them separately.

2. Coffee and Tea inhibit iron absorption. Drink them freely with your meals.

3. Stay away from enriched Breads, Pastas, Cereals, Cookies, Cakes etc. They are usually loaded with iron and if eaten in larger quantities than suggested it will cause problems.

4. Soy proteins can reduce absorption from plant sources. Be careful if you have thyroid issues as too much soy is no good for your thyroid function.

5. The tannins and polyphenols in Red Wine also inhibits iron absorption. Tannic red wines that are dark in color have been shown to be naturally higher in polyphenols. ( Iron overload can cause cirrhosis and my mom being just a carrier got it and died from it and she wasn't a drinker. I stay away from the alcohol, It's safer to take polyphenol supplements instead IMO from my families experience. There is still far too much they don't know about the disease dynamics.

6. The Calcium found in foods such as milk, yogurt, cheese, sardines, salmon, tofu, broccoli, almonds, figs, turnip greens and rhubarb and is the only known substance to inhibit absorption of both non-heme and heme iron.

7. Phytates and fiber found in wholegrains such as oats and bran reduce the absorption of iron.

8. Egg yolk contains a protein compound called phosvitin, which can inhibit iron absorption by up to 30%.

9. Oxalates, most often found in plant-based foods like spinach, soy, wheat, nuts, and nut butters. It’s especially common in tea and oxalic acid has been shown to reduce iron absorption.

10. Shellfish, such as mussels, oysters, and clams, sometimes contain Vibrio vulnificus bacteria. These bacteria can cause a serious infection called vibriosis.
People with hemochromatosis are more susceptible to vibriosis infection. So, it is extremely important to cook any shellfish thoroughly to kill the bacteria.

Eggplant Parmesan

2 large eggplants, sliced into 1/2 inch rounds
Salt, for drawing out moisture
1 cup all-purpose flour ( use bobs red mill all purpose unbleached organic flour. no iron in it. )
2 large eggs, beaten
2 cups breadcrumbs use ( use Ians gluten free panko it has 0 iron in it)
Olive oil, for frying
2 cups marinara sauce
1 1/2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese

Directions:
1.Slice eggplant, salt, and let sit to draw out moisture. Rinse and dry.
2.Dip eggplant slices in flour, egg, and breadcrumbs, then fry until golden.
3.Layer in a baking dish with marinara sauce, mozzarella, and Parmesan cheese.
4.Bake until bubbly and golden.

When choosing protein, choose chicken or turkey instead of red meat as it has less iron in it.

Roasted Chicken with Olives and Tomatoes
4 chicken thighs or drumsticks
2 tbsp olive oil
1 tsp dried oregano or rosemary
1 cup mixed olives
1 cup cherry tomatoes
3 garlic cloves, minced
Salt and pepper, to taste
Directions:
Roasted Chicken with Olives and Tomatoes

1.Season chicken pieces with salt, pepper, and herbs.
2.Brown in a skillet, then transfer to a baking dish.
3.Add a mix of olives, cherry tomatoes, garlic, and olive oil to the skillet.
4.Pour over the chicken, bake until chicken is cooked through.

Heme Iron: This type of iron is found in animal-based foods, particularly in red meat, poultry, and fish. It's bound to a molecule called heme, which gives these foods their red color. Heme iron is more easily absorbed by the body compared to non-heme iron.
Non-heme Iron: This form of iron is present in both plant-based and animal-based foods. However, it's not bound to heme molecules. Non-heme iron is generally less efficiently absorbed by the body compared to heme iron.

Controlling hemochromatosis, a condition characterized by excessive iron absorption and buildup in the body, involves managing iron intake from both heme and non-heme sources:

Dietary Control: Limiting the intake of foods rich in heme iron, such as red meat, and choosing more plant-based sources of iron can help manage iron levels. Additionally, avoiding iron supplements and vitamin C supplements (which enhance iron absorption) is recommended. As well as avoiding eating foods that have iron and foods that have vitamin C together. Oxalic acid (oxalate) is a compound found in many plant-based foods, including beans, leafy green vegetables, certain nuts and seeds, and many fruits and could help inhibit iron absorption. Phytate is a compound found in grains and legumes that decreases iron absorption. Other compounds in plant foods, known as polyphenols, can also decrease iron absorption.

Monitoring Iron Levels: Individuals with hemochromatosis should regularly monitor their iron levels through blood tests. This helps in adjusting dietary habits and, if necessary, undergoing therapeutic blood removal (phlebotomy) to reduce excess iron levels in the body.

Phlebotomy: Phlebotomy is paramount in helping control iron levels. Menstruation in women help control the iron overload which is why women tend to show symptoms after menopause.
