So last weekend I was gifted some amazing tomatoes from the tomato fairy. She challenged me by saying she was anxious to see what I did with them. Well I used the last of them this evening to make tomato upside-down corn bread. (I seem to have a thing for upside-down recipes). This recipe is simple.

One or two fresh tomatoes (depending on size) sliced. Place sliced tomatoes on a paper towel and cover with salt. Place another paper towel on top to get out some of the excess juice.

Heat oven to 400 degrees. Once hot place a stick of salted butter in a cast iron pan and put in the oven to melt.

I love Jif Cornbread. I prepared 2 boxes of Jif Cornbread per instructions, added in fresh basil, parsley, oregano, rosemary, thyme, garlic, and a half cup of shredded parmesan cheese. Mixed well. Once butter is melted remove the cast iron pan add tomatoes then pour in the corn bread batter. Bake 20 minutes or until a toothpick stuck in the center comes out clean.

Once done let it sit for about a minutes then flip onto a plate.

Yum!

Thanks to Green Acres Produce Produce at the we were able to get enough tomatoes to make our first batch of Maria's Tomato Jam of the season. So that means meatloaf for dinner. My family will no longer eat meatloaf unless it has has Maria's Tomato Jam. Since the garden is full of fresh herbs 🌿 I had to take advantage. I am not a big meatloaf fan unless it is my own. I am putting my recipe below. Or as close as I can get to it since when it comes to seasoning I add until the "ancestors say enough child." 🤣

1 bell pepper finely chopped (I used yellow since that is what I had)
1 small sweet onion finely chopped
1 tablespoon of fresh basil
1 tablespoon of fresh parsley
1 tablespoon fresh oregano
1 tablespoon fresh rosemary
2 cloves of garlic (I used more, but we are garlic freaks in my house)
2 large eggs (I used duck)
1 lb of ground beef
1 lb of Italian sausage (I used hot)
1 cup of sharp cheddar cheese shredded
1 cup of mozzarella shredded
Salt and pepper to taste
1 16 oz jar of Maria's Tomato Jam

Chopped fresh herbs.
Sautee onions and bell peppers until soft. Once soft add fresh herbs and garlic (If you don't have fresh herbs dried will work just use less). Add garlic last and cook for about 30 seconds once garlic is added.

In a large bowl add ground beef and Italian Sausage. Season with salt and pepper. Add eggs and sautéed herbs and vegetables. Add cheese. Gently mix until it a comes together. Don't over mix.

Place mixture in a 9X13 pan and shape into a loaf. Pour the jar of Maria's Tomato Jam on top of the loaf. Cover with aluminum foil. Bake at 425 degrees for 60 minutes or until the thickest portion is completely done.

When you are gifted a bunch of beautiful tomatoes this early in the season you let your creative juices flow. If you know me you know my love of tomatoes. They are truly my favorite food. I could eat them 3 meals a day and snack and never get tired of them (I may have been known to do this during prime tomato season). I love the idea of tomato pie and tarts, but never found a recipe that spoke to me so I made my own. In a pie crust I layered these beautiful tomatoes, fresh asparagus from my garden, fresh herbs from my garden, duck eggs, marscapone, ricotta, feta cheese, gouda, gruyere, bacon, sautéed onions, and garlic. Then once baked topped with mozzarella, because can you ever have too much cheese? I think I have found a new love.
