DISCARD OR DEVOUR? USDA officially adds watermelon rind to its nutrition database, confirming the often-trashed part of the fruit is edible and packed with fiber and potassium.
A one-third-cup serving of raw rind contains just 10 calories, 1 gram of dietary fiber, 140 milligrams of potassium and 4 milligrams of vitamin C.
The average watermelon is 30% rind — and 62% of consumers throw it straight in the trash, according to the National Watermelon Promotion Board.
