And this was the day before the rain! At least the flowers and newly planted strawberries enjoyed the rain today.

After 2 years of rest and beneficial cover crops the soil in this field looks GREAT! We are working hard to get ready for our 2027 USDA-certified organic strawberry crop. Planting starts Thursday.

Well, the weather forecasts were waaaay off for this weekend! So, why can’t we just fire up the oven and start making delicious pizzas right now?

The short answer: Our pizza process takes a full week of prep, and it all starts on Monday.

Here is a look at what goes into a single pizza weekend:

Monday: We place our weekly order for hand-pulled fresh mozzarella from Uno Alla Volta based on early weather reports. (The same goes for some of our other incredible local partners. Shout out to Crowe’s Dough, Pink Turtle Cookies, Bob’s Bad Ass Pretzels, and Barnhardt Sweets!)

Tuesday: We open pizza reservations for the upcoming weekend, check the updated weather, and set our staff schedule.

Wed & Thursday: Shopping, stocking the kitchen, building pizza boxes, and prepping labels.

Fri – Sun: Early mornings and late nights are spent making dough by hand. These dough balls need hours to rise slowly in the cooler.

Cooking Mornings: We wake up before dawn to build a 700-degree fire that must burn for hours before the first pizza goes in. Meanwhile, the team is roasting corn for the Farmer Cathy, making sauce, and chopping, grating and cutting fresh toppings.

The most important ingredient? Our staff. ❤️

We have the absolute best work family. They work long hard hours during the season and do a terrific job. Because the early forecast looked so bleak across all weather apps and we hadn’t yet opened reservations, we let the full Wise Pie, GreenHouse and Wise Acres Farm staff know that we would be closed this Sunday.

Going forward even if we decide the weather is too questionable to fire up the pizza oven, the farm will remain open unless there is severe weather. All reservations will be notified via the same email address they used to make the reservation if anything changes. It’s always a good idea to check for an email from Bookeo before heading this way.

The Good News:

October (NO Pizza) reservations for the rest of the season are FULLY OPEN! Please sign-up, we would love to have you out. We are open by reservation
Thurs-Sun.

(YES Pizza) reservations open every Tuesday for the following Fri-Sun. (After we check the sometimes unreliable forecasts.)

Beat the rain! Looks like we are in for a wet Saturday evening and Sunday. Come on out on Fri and Sat for farm fun and fresh air before we are all stuck inside.

Wise Acres and the GreenHouse will be closed all day Sunday.
