Clients often ask me if I include crackers or any bread products in my charcuterie boxes.
The answer is, NOT IN, but they ARE included with the purchase.
There are several reasons why I don't put them, or any baked good product, for that matter!
First, although I always ask if there will be anyone with a gluten allergy, there is always that chance there may be someone who may react. Or, be unable to eat anything as it may be cross contaminated for them. I want everyone to be able to enjoy!
Second, crackers tend to absorb any moisture, such as that from meats, cheese or fruits, which leaves them, as we call it, "floppy". Most particularly if the box is made the day before and refrigerated until pick up or delivery.
Third, do crackers or any bread/baked goods really add any flair? I guess it depends on the quality and appearance of those item(s).
What they truly are is a space filler for some, and frankly, I would rather add more meats, cheeses, fruits, etc.
Those items are the soul of the display! And, it gives my customers more bang for their buck!
Crackers and baked goods will always be included with our boxes or boards, but, on the side, where they belong!
Mixing bakery items, placing them alongside, let's say salami, only cause them to absorb the meat (or cheese) flavors! And, who wants a salami muffin, cupcake or cookie!? 😂
It causes crackers to absorb and become soft.
Sweet and savory can be achieved in other ways, not as a filler to use up space, just to fill a box or board!
Recently I've seen some of these boxes, and just shake my head, knowing the customer truly isn't getting the most out of their order.
If they want baked goods, and I'm able to provide them, they will go in a separate box.
I do the same with grazing tables. Many items are on platters, while some are directly on the (parchment paper covered) table.
But, they are separated from actually touching the rest of the items.
I wanted to explain my reasons for how I continue to artfully display the items requested in an order, so that my customers get all they ask for, and still include the starches!
