Two ingredients. Both of them are alive.
Kefir gets lumped in with yogurt and they're really not the same animal.
Yogurt is a few strains of bacteria, held warm for a few hours, done. Kefir starts with grains... little cauliflower-looking clusters of bacteria and yeast living together in a matrix they built themselves. Some might use a packet powder with a few strains... not us. We use the real kefir grains. An actual living thing that has to be fed and kept going, batch after batch, or it dies.
Farmer Leon's wife tends these grains. Same grains, over and over. You don't buy new ones, you keep the ones you've got alive.
Especially when made with raw milk, what you end up with is a lot more going on in the jar than yogurt has. More strains, more variety, and the yeasts too, which is where the little bit of fizz comes from.
It's tangier than yogurt and it pours. Straight from the jar if you like sour. Otherwise blend it with frozen berries and a spoon of honey, pour it over granola, or use it anywhere a recipe wants buttermilk.
Made with our raw A2A2 milk. Nothing else in there.
