Realized my last IG post didn’t make its way to FB so I’ll share it with you all!

Sorry we’ve been quiet lately…we moved up to the suburbs (Westfield) and turned our first home into an Airbnb, so it’s been a crazy few months!

More to come soon on our future and new batches that we have planned, but for now, comment what you’re drinking this weekend and I’ll pick one person next week to send a nice care package of bottles and merch to!

One Last Thing You Never Said 🌷
I took my solera aged traditional mead (aged a year in a single malt whiskey barrel) and gave it a dirty chai treatment! It was aged on black tea & chai spices, extra vanilla, Saigon cinnamon, and a dash of cold brew coffee. The last mead that’ll be bottled in our original home as we’ve made the move up to Westfield!
🕰️ That also means there will be a slight hiatus in new meads as we finish the move and start up some new batches. Planned batches to come…red currant, juniper, & black peppercorn with black mangrove honey then a carrot & avocado blossom honey traditional.
🏡 We still own the land in Bates-Hendricks to hopefully build out the commercial space but that is also taking some time…but we’ll be sure to share any updates here!

Say hello to Sweetums 🐱!
This is batch 2 of Cats-Hendricks, a traditional mead that was solera aged in a 15 gallon single malt whiskey barrel. Batch 1 started as a dry local wildflower traditional base that I then bottled half and filled it up again with another (sweet) traditional mead made with three different honeys from Hawaii.
📝 12 months total in the barrel makes for a boozy & complex mead with a lot of barrel presence. It’s semi-sweet and finished around 15% abv. I took the other half of this batch and am now aging it on Chai Spices, Vanilla, and Coffee for an extra dirty chai that’ll be bottled in a few weeks.

You Already Know!
🌺 A traditional mead made with Kiawe Blossom Honey from .kele.honey that was aged on American Oak for a few months. The residual sweetness is balanced by a slight bitterness & tannins from the oak. Semi-sweet and 11.5% but crushable! Named after a track!

Hope everyone is enjoying the new year so far! To kick off the year, how about we share a few bottles with someone?! I’ll even toss in some stickers & for you to enjoy it with🥂
🐱 Cats-Hendricks: Mustache - local wildflower traditional aged in a single malt whiskey barrel for 6 months. 2 sweetnesses, off-dry & sweet!
🤨I’m Not Worried About It - my collab with where we took some honey from his area and apple cider from mine and then aged it all on some Malort soaked oak and grapefruit.
🇳🇱Gezellig - another collab, this time with from across the pond! This one we took 3 amazing honeys and caramelized them and fermented it all with a nice red wine yeast. It then saw a the inside of a super fresh rye barrel for 6 months to pick up all the spice & booze for some added complexity. One bottle even has a thiccc vanilla bean in it that will only get better with some time.

2023 was quite the year! We slowed down a bit thanks to our first kiddo Magnolia but still managed to have a great time making and sharing our craft with everyone this year!

A quick recap of 2023…we made 18 different meads, collaborated on 5 commercial meads, helped raise close to 5k for charities, poured at 2 beer fests, & gave away over 200 bottles! Last but not least, we worked with the amazing people at to refresh our branding and we finally offered merch and

We had the pleasure of meeting at the last & knew we needed to collab on something. We’ve chatted over the years but it was great to meet this Dutch legend in person! A true virtual collab, we landed on a Bochet (caramelized honey) and decided to barrel age it for some added depth. We shared our past methods of making a Bochet and combined them for this collab then chose some of the best and most expensive honeys from America…made with caramelized Raspberry Blossom, Blackberry Blossom, and Meadowfoam honey. We then fermented it with a red wine yeast known for its fruitiness and vanilla notes. It was then aged in a 10 gallon Rye Barrel for just under 6 months. It turned out amazing! 😻 It’s smooth & sweet caramel with an awesome finish. The flavor almost comes across like a barleywine but it’s so damn smooth for 14% 🤤
🍦 Feeling inspired by we even made a few whole vanilla bean in bottle variants: Grade A Extra Long Madagascar Bourbon Vanilla Beans & some with Gourmet Madagascar Pompona Vanilla Beans. A few barely fit in these tall 375 bellissima bottles 😯

As for the name…A perfect example of untranslatability is seen in the Dutch language through this word gezellig, which does not have an English equivalent. Literally, it means cozy, quaint, or nice, but can also connote time spent with loved ones, seeing a friend after a long absence, or general togetherness. We thought it was a fitting name 🤗 label artwork is of a windmill in Amsterdam 🥂

Cats-Hendricks: Mustache! The sweetest cat, named Mustache, gets his own label 😻

For this locally inspired barrel aged mead, we sourced 60 lbs of wildflower honey from (who are less than 5 minutes away from us), and aged it in a single malt whiskey barrel for 6 months. We kept this one on the drier side with a final gravity of 1.025 and let the barrel do its work! It finished around 18% but I’m sure that 6 months in the barrel added another 1-2%, as it has some wonderful warmth and booziness to it. We’ll be sipping this one slowly and enjoying it slightly chilled!

We racked 50% of the 15 gallon barrel for this mead and saved 3 gallons to bump the sweetness up a little for those that want something a little less boozy. We then topped off the barrel again with another traditional mead that was sweet and 4 varieties of Hawaiian honey from - batch 2 of coming in March!

In all seriousness, we think this mead turned out great! “I’m Not Worried About It” is a sweet apple mead that was made with West Virginia Sumac Honey that was dark, earthy, bitter, with a slight caramel note. We then added some Ruby Red Grapefruit for some added bitterness & mild sweetness before resting it on some oak that was soaked in my favorite booze, Malort! It’s a boozy sweet mead that drinks more like a cocktail. The sweetness and heat of the 15% is balanced nicely with the bitterness from the grapefruit and Malort. 🥂

Thanks to everyone that picked up some stuff during our first round of preorders! We had over 60 orders & will have a little bit of inventory leftover after we ship everything out in December 🤩 If you didn’t know, as home brewers, we’ve never been able to make a dime on the mead projects we produce and everything we share we give to friends for free…so every little bit we can make on these merch runs is appreciated. We already have some ideas for round 2 of merch and will be sharing that in late December, so keep an eye out if you didn’t see anything you loved on this round!

🚪 Barrel Aged FAKE DOORS! 🚪
For this one, we combined Black Currant, Elliott Blueberries, and a touch of Meadowfoam honey. It was then aged in a Deth’s Tar barrel that previously held some Stagg Jr bourbon. This mead is something special and takes you on a journey of flavors as you let it warm up! So happy we were able to share this at FOBAB; the reception was great 😊

The response to our new branding has been amazing and we are officially ready to start offering our first wave of merch preorders!!

We have a variety of options that will be open for preorder during the next two weeks. We’ll have zip-ups, embroidered hats, tees, glassware, & stickers. We went for high quality fabrics and finishes to complement the amazing work that did for us. There’s even some options in there that will never be made again. We are also working on beanies & pullover sweaters for the colder months ahead.
